one jar is colonizing faster..

One of my jars is colonizing a little quicker than the others,.. i'm assuming this means that i'll just have to start fruiting that one as soon as i see pins, right?

you can initiate fruiting when they all reach 100% colonization. just let the ones that finish first hang out till the others are done.
