When the jars are in the pressure cooker, the water level shouldn?t go higher than 1/2 of the jar hight.

ANNO, is it ok to stack jars? my PC will hold 16 half pints if I stack seven of them on top of the others, this is ok right? its the heat that does the job, per say, and does not have to be actually in the water?

You can stack them, sure.

It?s actually the steam that condenses on all surfaces colder than the steam itself.

I'm not Anno, but I will shoot an answer your way. You can stack the jars. It is the steam which transfers the heat which kills the microbs. The water is there to produce the steam.
