multivariable mycology

I've got 12 jars I innoculated shroom wizard style, with the verm/brf substrate and about an inch of empty space on top (no verm top layer). I had punched holes in the lids and innoculated w/ syringe, and spore juice did run down side of jar. What I'm looking at is about 10 days since innoculation, with decent mycelium on the tops, some jars having some growth down the sides as well. The mycelium has grown some, but to make sure the conditions are right, I bought a 8inch 100 watt fully submersible aquarium heater with temp settings. I was wondering if (#1) I should first just flip the jars, or take the lids (totally sealed) off and replace them with loose aluminum foil covers to let them breath a bit more (the substrate could be too wet right now). And (#2), if/when I move them into 86 degree water for better temp control, how high should the water level be on the jars? any good incubation tek site suggestions would also be helpful. Thanks for all the help.
