You can cool it in the fridge or fo extra fast cooling use the freezer! just don't leave it in the freezer for too long or your gonna have frozen casing!

Put it in the freezer and id say about an hour. I nuke mine, which you might want to look into ive never had a problem and pasteurizing is a bitch enough with the substrate that im not going to pasteurize my casing layer.

rushing things is always bad form in this hobby... always better safe than sorry, especially this late in the game... why risk screwing up now after you've gone through all the trouble to get to that point?

that being said, you can stick it in the fridge to speed things up :smile:  make sure it remains covered, as it will dry quickly when forced to cool quickly.

one caveat, if you did treat it in a microwave, make sure you let it hang around and stay at high temps for at least an hour before you try to rapidly cool it.  don't just nuke and stick in the fridge immediately after.

absolutely it should be cool to the touch.  mycelium begins to die at around 105F, and your hands are no thermometer and they're already near 100 degrees themselevs - warm to the touch may well be quite above 105.

As CC points out.
Having PATIENCE is a GREAT part of the mush/cult endeavor.
If you lack PATIENCE.
You most often fail.

I let pasteurized substrate & casing mix

COOL OVERNIGHT.

AFTER COOLING;
I even stick substrate & casing mix bags in the incubator.
So, everything is close to the same temps, BEFORE USE.

Mycelium is prone to TEMPERATURE SHOCK.

Best to MINIMIZE that.
