What healthy food/vegetables do you make?

Usually if I'm looking to eat something healthy and have to make it myself I eat salad that comes premixed in a plastic container. Pretty lame, I know. I need some ideas.

Get some szechuan(sp) stir fry sauce, some veggies like brocolli, bell peppers, onions, carrots, zuccini and regular squash, garlic cloves, etc. Be sure and start cooking the brocolli and carrots first, to make sure that they get done all the way. Add the rest of the veggies in a large pan, or wok. Stir occasionally until all veggies are done. Spoon out onto white rice, or by itself. Voila! Veggie stir fry that is scrumdiddliumptious!

I like steamed kale with just a tad of bacon fat (just a little, olive oil is also good) but kale isn't everybody's taste, no meat green chilli (more like a gravy) on bread is good.. it's also damned good on potatoes.

steamed brocolli and carrots, mashed or baked potatoe, lima beans, fried okra, corn, baked/fried apples, fried mushrooms, sweetor garden peas, green beans

Not sure if I've tried eggplant, it's the pear shaped purple thing isn't it?
Baby corn is at the top of my favorites list for vegetables. Baby corn with a butter & salt dipping mixture, mmmm. I just thought that up, tho it would likely contradict all intentions of eating healthy.
I really like raw veggies dipping in different salad dressings, tho you miss a lot of vitamins that way eh?

get a vita-mix (or another super hi-powered blender); add bananas, kale, other fruits (apples, nectarines, peaches, etc - just take out cores/pits), some juice, some yoghurt, and ice. makes for a super delicious and nutrious smoothie

I just found some really nice mini pears and apples from the grocery store last week. The pears are called Forelle and the Apples are New Zealand Rose and Fuji types. Small and sweet.

I never bother to make it, but I have someone who makes uber steamed broccoli for me. Otherwise the healthiest thing I make for myself is, sadly, probably scrambled eggs. Which, depending on the week, are either really really good for you or instant death, science isn't really sure.

I eat lots of those, often 3 at a time. So either I'm going to live forever, or die yesterday 
I'm no good at omlettes tho, I need those things made for me if I want them to stay in one piece without the inside all runny and the outside burnt to a crisp.
I think I'll make some eggs after I eat more cake.

Boil some eggs, make a nice salad, cut up the eggs, add dressing, and enjoy. SIMPLE and very healthy if you do it right. Science has spoken, EGGS are OK 
Relax people, does no one remember Albery Hoffmans 100th birthday??? What did he say?? about living until 100?? Was is LSD that kept him alive that long, NO. Well then what???
Eggs.  Of course I cant find the article where he says that but he did say that eggs are a great food and contain everything our cells need.

buy fresh vegetables. always better and less expensive.
try a pasta dish.
penne noodles boiled to ala dente.
saute the noodles with olive oil, garlic, black pepper, red onion, roma tomato, a dash of Balsamic vinegarette.
- slice the tomatoes into 1/4 and deseed by running underneath water. - chop the garlic into tiny pieces - cut the red onion into long thin slices
saute with a small pan and mix well.
serve with fresh green onion shoots (chopped) on top.
delicious. easy to make. cheap. and healthy.
