Leaving the jars un attended

If I have to leave on a trip, is it ok to inoculate my jars and leave them for a couple weeks, then check them when I get back. That couldn't hurt, could it? Don't you just leave them in a dark corner anyway?

Yeah go ahead and inoculate before your trip when you get back most of the waiting will be over. I wish I went on a trip right after I inoculated mine so I wouldn't have to see the slow daily growth I got going.
