using a food dehydrator to dry mushrooms
    #6286087 - 11/15/06 03:10 PM (14 years, 5 months ago)

I just purchased a food dehydrator to dry my mushrooms. I read the manual that came with it and it says to slice mushrooms into flat pieces before drying them. Has anyone here used a food dehydrator to dry their mushrooms? Could I just put them into the dehydrator whole?

Yeah, putting them in the dehydrator whole is fine. It would probably be best to handle the mushrooms as little as possible, anyway, to avoid bruising them all up and whatnot.

Just stick them in there whole. Unless you like sliced up mushrooms

If you have LARGE fruits, they will dry faster, if the stem is sliced in half, the long way.
Large whole fruits, just dry a little slower.

Don't rush the drying process.
Low heat (95 to 110F) for longer.
Is (imho) better than HIGH heat, for less time.

Ok so does the heat not loose enough potency to matter? I have a dehydrator but haven't used it due to the heat and loosing potency should I use it? It sure would beat using desiccants.

Nevermind RR answered my question in another post.
RR you are my hero!!

Most home use dehydrators (without a temperature control dial) run in the range of 145/155F.

They are safe to use, without noticeable potency loss.

Some home units are far better than others.
Those without any fan, run at slightly higher temperatures.
And, are slower working.
Ones with fans, are preferable.

Wrong.
Unless your place has Rh, near zero.

Without some small application of heat.
Fruits cannot get much drier than the air fanned through them.

Check the Rh of the room.

I use a dehydrator with no fan, and never had any problems whatsoever. No notable potency loss or wierd shrink/deformage either.

when dealing with fruits that are to large to fit in the space between racks, i partially break them where the stem connects to the cap. this way, the cap can lay parallel to the rack but still remains attached to the stem.
