Ideal size of fruiting trays?

Okay, let's say I'm planning on growing using rye berries cased with 50/50+ out of quart jars. My question is this: Would it be more beneficial to use a whole quart jar in an 8x8 tray, or two 8x4 trays?

To be honest I don't know which is more beneficial but I would personally do two trays. I guess theres not much difference but what the hell...
