Other than having a bulk grow in a tub and wrapping it in a blanket during spawn run should you cover the top with some plastic or foil? Or should you just let it sit open in the tub?

the top should be on it..and there should be holes in the tub...i fill my holes with polyfill during the spawn run and for fruiting..others leave it off during the spawn run

Well, I would most definately keep the top of the tub on, but I mean do you put a foil or plastic lining on the top of the substrate/spawn mix itself at all?
Also, I know how important FAE is during the fruiting stage, but if you didn't put holes with polyfill in the tub at all how much gas exchange does it really need during spawn run? Could you just fan it every now and then without too much worry of contamination?

If you want to add plastic to the top of your spawn, you can, its not a problem. Trashbag or plastic drop cloth IME work best, syran wrap just to sticky when I take it off for my taste.
If you havn't made holes yet the only problem is making them after the fact (making a mess all over your spawn, bending tub, cracking wall). I make the holes, and seal them back up until fruiting stage. Then you just pop the polyfil in. You want Co2 buildup during your spawn run.
Some others don't do it that way and just leave polyfil in from the start. That works fine too. It is all relative to depth and mass of substrate and area your spawning/fruiting in.

Cover it up and allow as little air exchange as possible You do not want light to penetrate I use black garbage bags myself

That's right. CO2 = vegging mycelium. O2 = fruiting.

Just make sure it's not completely air tight. You still need a bit of gas exchange. Elevated CO2 levels are normal, but they can't be allowed to get too high. If the mycelium runs totally out of oxygen, it dies. RR
