Why should the seals not be used downwards to make a tighter air tight seal? Sorry about that cross post Roadkill, I forgot which forumn I was in.

rubber side up...cause you don't want the lid to seal.

hey everyone...

i think i accidently put the rubber side down on a few jars....this was done 3 days ago for another 6 1/2 pints... are you saying this wont work at all?

Make sure they are on loosely and it will work... you just dont want it airtight, because your guys need to breathe.

ok they were put on tight.... how do i reverse this and losen them up without contam? any input would help alot

really i thought a complete seal was ok on 1/2 pint jar. Maybe my brains going but I could swear the teks say to seal the jars.

In the event that my brain has failed...

How about this as a way to get them air. Alcohol on the tops of the sealed jars. Put on a "lid of tin foil while still a little damp. Then unscrew with the foil still covering the top of the jar. Maybe leave the foil in place too.

i've been doing it with the seal down (because of the concave shape of the lid, if i turn it over, it fucks the lid up when i try to pound a nail through.  if i make the holes the regular way and turn the lid upside down, those jagged edges protrude outward and i'm afraid of tetanus) :smile:

anyway, i've had no problems at all this way.  are you using a dry layer of vermiculite on the top of your jars to stop airborne contaminants?  if so, you should be able to keep the lids loose without worrying about contams.

everyone else seems to do it the other way, but it certainly won't fail the way you've done it.

I use the tin foil method it works so much better than no foil and the cakes stay moister... lids up or thell seel like your canning and when you inoculate (take tape off the holes air will suck in to jar fuuut like that greater risk of contams especially without the foil:) hope that helps
