Smoking Mushrooms?? (on a smoker, to eat)

I am making a soup with smoked turkey, I was wondering if anyone has tried mesquite smoking mushrooms, cuz I bought a bunch of shiitake and crimini. If anyone has ever tried this, or has any ideas, let me know please??

i have on kabobs, with other veggies, just add some soaked mesquite chips to the charcoal.  if you have a smoker, well,  :smirk:  :thumbup:  lucky bastard.

I have also cooked white button and shiitake on kabob's on the grill. Both times I added a little bit of hickory that had soaked in water for at least an hour or so. I loved them.

For my kabobs the key to making sure they don't burn horribly I whip up a mix of olive oil and garlic powder before I start. I liberally add this with a brush to the kabob's both as before they go on the grill and while cooking.

The crimini are to die for this way, but I didn't care for shiitakes like this. I think I didn't get enough oil on them so they got a little too cooked and were a bit too chewy for my taste. If I was going to try shiitake again I would probably supersaturate the gills in this mix before I put them on the fire.

As for smoking I'm sure the technique would change. If you are smoking along with the turkey I would either stuff them straight into the bird or put them on a rack above the bird so the flavor drips onto the turkey. Yum yum. With mushies on the grill I don't like them overly done, so I don't know how easy it would be to time that on a smoker, but since they would continue to be juicy they might not be effected by overcooking like they would on a grill. Ahh, this sounds tasty. I would love to hear your results, and I may fire up my smoker this weekend, heh.

I love to grill shiitakes and portabellos outside. Rub your favorite salad dressing into the gills, then coat the top of the cap with olive oil and put on the grill, gill side up. I like using blue cheese or ceaser. I cut the stems off, and only use the caps. Mrs rabbit gets the stems to use in soups.

cool. gotta wait till tomorrow for the wood chunks to soak overnight. then I'll get to work. the ingredients are: smoked turkey drunsticks, shiitake, crimini, portabella, and another unknown mushie that looks like a mini shiitake (no name for it at the store), Anasazi beans, corn, carrots, onions, and chipotle peppers. should be tasty.

Since your' going to be using smoked turkey drunsticks. You don't have to smoke the mushrooms. Smoke goes a long way.
What's really good is smoke cheese.

With oyster mushrooms coming out my ears I had to come up with an innovative way to cook these buggers other than just sauteing them. By the way, they freeze GREAT after sauteing. Anyway, I had the brite ideal to put some of em on the ole smoker.. Yeah! I got out the ole bag of mesquite and stoked up my electric smoker... 2 hours later I had smoked mushrooms. Amazingly juicy but a bit on the tough side. They tasted just like smoked oysters but not the same texture. Go figure Would I do it again, NO

Normally, only the stems get tough. That's why I cut them off. Of course, I usually don't smoke them either. Just grill along with the steaks over charcoal.
