Hericium, Shiitake, and Reishi projects

Here's a few projects we've been working on lately. I like to grill Shiitake, so I've found that by pruning most of the pins off a substrate block, the remaining fruits grow huge and just right for the BBQ grill, without effecting the total harvest at all. Rub a bit of blue cheese or Ceasars dressing into the gills, olive oil into the cap, and slap it on the grill. mmmmmm good. The sharpie is a full size, 6" one just for size comparison. They're as big or bigger than most grocery store portabellos.

The pint jars of Shiitake were grown in a terrarium with perlite humidification. As you can see, they fruited even before the mycelium turned brown. Proper cold shocking and pinning strategy will deliver flushes of shiitake within thirty days of spawning to sawdust.

The Hericium is from a clone I took last year and transferred to slants to store in the refrigerator. The key with cloning is to get lots of clones from wild fruits so you can find the one(s) that work best in artificial conditions.

The G oregonese is from a clone taken last summer the day a dumb ass sheriff deputy gave me a ticket for passing him on a dirt road. He was pissed that he had to breathe my dirt, but the butt was going ten miles per hour under the speed limit so I passed him. Anyway, I named this one the 'barney fife' strain and it's the best reishi fruiting strain I have..lol

All of these are growing on the same substrate mix that is Alder sawdust, wheat bran and gypsum. No woodchips were used.

The hericium picture was taken just before harvest. That batch went into some spaghetti sauce I made last night. Just cook them like any mushroom, then toss into the sauce.

Getting shiitake to fruit early is all about timing. I watch the jars or spawn bags closely and give them two days past full colonization, then toss into the refrigerator for two weeks. After the two weeks of cold shock, place in a bucket of cold water overnight to soak, then immediately put into fruiting conditions. They begin to pin almost by the next day. Humidity is cycled between 70% and 100%, and the blocks are removed from the greenhouse every second day and washed under the kitchen faucet with a forcefull stream of water. This washes the trichoderma spores off before they have a chance to germinate and grow. I use this procedure for all sawdust/woodchip blocks that are exposed. It works wonders.

The reishi blocks are located over the output of the coolmist humidifier so a misting fog blows on them anytime the humidifier is running. By cutting a + shaped slit in the bag instead of unwrapping it, conks are encouraged to form instead of antlers.

Questions:

-Why do you cold shock the blocks for so long time?

-Why cold shock and then soak and not the opposite?

-Can you explain better the cycle for the humidity?
-How can you lower the rate of humidty until 70%?

-When you wash the blocks with tap water you wear gloves?
-Doesn't the pressure of the water damage the mycelium of the block?

Nice stuff Roger. How was the ease for growing the Hericium? Just like an Oyster more or less? I've read a page where a woman was simply growing them in her kitchen in a spawn bag with a hole in the bottom of it. No humidity or nothing as far as artificial enviroments. Do you think this could work for Hericium? Basically open air fruiting from a spawn bag?

I wouldn't try hericium in the open air, but they are pretty easy to grow. They'll dry out if in too low humidity. I prefer to fruit them from the top of the bag instead of a hole or holes in the sides. About a week after full colonization, simply cut a few slits in the bag above the substrate level. The fruits should come soon thereafter. No cold shocking is necessary. When the fruits get about golf ball to tennis ball size, cut the rest of the top off the bag to give them more air exchange as they grow out. At this point, place into a greenhouse or other high humidity location.

On the Shiitake, I cold shock first, then soak. The long cold shock while dry signals the block to pin while still totally white. The dunk/soak just before fruits come ensures the substrate is fully hydrated for the flush and doesn't dry out.

This combination gives fruits much faster than any other, provided you cycle the humidity. I cycle the humidity as said, by simply putting the humidifiers on two timers in series. The humidifier is plugged into a cycle timer, set for four minutes on, followed by ten minutes off. This timer is downstream of a timer set for five hours on, two hours off. The five hours on allows the cycle timer to bring the humidity up very high, before the two hours off time starts, which lets the humidity drop to 70% or less, then the whole cycle repeats.

The combination of the long cold shock, and the cycling humidity makes the Shiitake just explode. It also seems to cut way down on trichoderma.

Washing the Shiitake blocks under running water doesn't hurt them in any way, even after pins form. I even use that sprayer on a hose next to the faucet, to really blast them. I don't wear gloves for this. It's not necessary.

Hi Mr Rabbit

If you can do this strategy with shiitake is because you probably have a wide temp or hot temp strain. I don't think this could work with a cold temp strain. Some strains need to be incubated like 4 months. Those strains usually give higher quality mushrooms.

Would be interesting that you sow us the third, fourth and fifth flushes.

Also would be interesting that you show us the gills part of those shiitake.

The Hericium look more like an Hericium Coralloides than an Hericium Erinaceus?

From the Hericium blocks do you expect getting all the flushes from the top parts of them?

I have three shelving units that run from floor to ceiling with just enough vertical space between each shelf for quart jars. This allows me to have up to 2,000 quart jars colonizing at any given time. The colonizing quart jars heat my entire condo in the winter. Two refrigerators are used for cold shocking, plus a small 'dorm' type refrigerator is dedicated for storage of cultures.

One room of the house is devoted to growing areas/greenhouse.

The quickest way to learn the hobby is to grow out ten times as much grain spawn as you know you'll be able to fruit, then try something different with each one. Keep notes. This is how I came up with the tek to produce shiitake before the blocks turn brown. Timing is everything.

micolo, this is not a hot weather shiitake strain. I also have a few of those from Nigeria, but have never been happy with the flavor or yield, so I don't use those cultures anymore. The isolated shiitake strain I'm using is the Shiitake 75 from www.alohamedicinals.com John Holliday was kind enough to send me some cultures to work on grow teks. The Hericium is indeed Erinaceus.

Is it possible that you show us the third, fourth and fifth flushes?
Also would be interesting that you show us the gills part of those shiitake (the opposite side of the caps). 6 or 7 mush would be good.
After what you said, from the Hericium blocks do you expect getting all the flushes (usualy about 5) from the top parts of them?

I maybe missunderstood but as you said you use space for 2000 quarts of spawn. Each quart is good for inoculate 1 sub bag. So it means you probably grow thousands of them. Is it possible to see your growing room with all those sub bags. How do you shock so many bags with only 2 fridg?
I can imagine the job of cleaning thousands of quarts!

It's many different species, many of which don't require a cold shock such as hericium, reishi, oyster, hypsizygus ulmarius, enoki, etc. Also remember, I supply spawn to a couple of the small local farms, so I certainly don't grow out and fruit all the grain spawn I generate.

Flushes from the Shiitake come about three to four weeks apart. I let the blocks sit dormant outside the growing area for ten days to two weeks after harvest to dry out. Removing from the greenhouses eliminates the risk of trichoderma because the blocks are exposed to the open air where trich can't thrive. After that, a 24 hour soak in cold water, usually outdoors unless it's too hot in summer or cold in winter, then they're placed back into the fruiting environment.

I'll get ya some gill shots on the next harvest.

The only time I grow large quantities of Shiitake is during the fall/winter when I can move the bags outdoors for the cold shock. There's no way I could do all that in two refrigerators. During summer, I only grow enough for our own use.

I finally gave up on my P nameko by the way. I think I must just have a crap culture. It colonizes very fast, and gets the red/brown slime on top and sides, but pins never develop. Finally, after two months I just couldn't keep up with keeping the trichoderma off them, even with washing them under the faucet or garden hose nearly every day. I was using sawdust/woodchips with quite a bit of wheat bran as usual, so that may have been the problem. The next batch I do, I'll try your suggestion about cutting down the wheat bran, and I think I'll leave out the wood chips to fight the green molds. My Shiitake do very well on sawdust alone, but of course I don't get as many flushes as I would with woodchips added.

Roger, do you notice any unpleasent flavor when you alow lions mane to grow that long? I always pick mine young to avoid bitterness. Also, how much do you normaly get off a block. I normaly get about 1lb off each lions mane block after 4 or so flushes. I noticed a couple aborted shiitake on you blocks, this is a problem I seem to be plagued with. The strain I have now is much better about that than the last one I was using but it still gives me some problems. Is this only a first flush issue with you strain? I never realy need to cold shock my shiitake blocks, I wonder if its not a strain related thing?

Also, does your H ulmarius colonize petris quickly? I just started a strain from spores and its growin pretty slow.

Does adding wood chips to sawdust blocks really give higher yealds or do the blocks just last longer/ give more flushes?

That Lions mane block had well over a pound from just that one flush. No, the flavor is excellent. At the top, you can see where it's discolored from dropping spores. I cut those parts off of course.

Adding wood chips makes the blocks last a bit longer, but in my experience flushes are smaller, and they're more succeptable to trichoderma.

My H ulmarius colonizes a petri dish in five or six days. Very fast growing.

Yea, shiitake is bad about mutants like that. I could have trimmed them off, but mrs rabbit likes them for soups, so I leave them on usually.

Cool, what kind of sawdust do you grow lions mane on? Is it supplemented with just bran? Where do you get bran, I can't find it anywhere cheap enough to use in bulk. I may have to get that strain from you...:dancing: :biggrin:

I get wheat bran from the local health food store. It's cheap in bulk. My 40 KG bag cost $30.

I'm using Alder sawdust because that's what we have in this area. Any hardwood will work though.

How in the world do you process 2,000 quart jars?  This is simpy mind-boggling to me.  Do you have a couple of AA pressure cookers and do a run or two each day?  What is the turn around time on restocking our spawn (are you making 2,000 quarts a month, week, quarter, etc.)?  Do you shake the jars more than once?  I'm guessing no, or that alone would be a part time job for you or Mrs. Rabbit, heh. 

Also, why do you use quart jars?  With such a large volume why not use half gallon or gallon jars, or bags? 

Once again thanks for all the good questions and responses.  I'm glad I'm not the only person producting excess spawn for 'experimental projects' but I'm more on par with double the spawn, not 10x :smile:

I have 4 AA 921's because that's the largest that can fit on my stove all at the same time.  When we're stocking the grow area, the PC's run 24/7 and the mrs and I work in shifts.  She's my slave labor, but thank god she doesn't read these forums or I'd be dead for saying that.  She still thinks she's co-owner of a family business. :wink:

I only shake jars once.  I don't even shake after inoculating with agar wedges, but simply drop them on top.  After a few days when the top begins to colonize, I shake for the one and only time.  I've been intending to get a paint can shaker, but haven't yet, so it's a muscle fatiguing job to shake that many jars.

I absolutely hate half gallon and gallon jars for spawn as well as  spawn bags.  They simply don't do as well as quart jars.  Of course, large filter patch bags are great for bulk substrates such as sawdust/woodchips.

Wow RR, every time you post a pic or grow guide I get more and more inspired about growing these wood substrate species. Did you ever write up a grow guide for ganoderma? I know I've seen a lot of requests around for it but maybe I missed it.

Also, is there a link anywhere to your time lapse video you made of reishi? I found the post about it but the links didn't seem to work anymore. I love time lapse and I love reishi so I really want to see that vid!! The spore one was pretty neat.

Crap. I haven't had time to work on my website in months because I'm too busy filming my instructional DVD. I just checked and none of my time lapse links work. This really pisses me off. I need to find a good web host. I've paid these bastards $5,000 so far for hosting and advertising and I don't even come up in the first ten pages of google using my keywords and meta tag labels directly. I'll probably just take my website down. My DVD is going to be at amazon.com and bookstores anyway. I doubt I'll even be selling directly as I had originally planned. I'll try to find a way to get the time lapse vids back up though.

RR, what is the species of hericium, do you know? Here in NZ we have Hericium coralloides, and thats all I would be able to grow (anything that's not in NZ already is not allowed in at the moment, not without a hell of a lot of time, money and beaurocracy at least). What is the shelf life like of hericium? Are they something that is grown commercially or just for hobby cultivation?

I've never seen them grown commercially. Shelf life is poor. They also just don't seem to hydrate well if dried. The above is Hericium Erinaceus. It's one of our favorites, and very tasty. I like it best in spaghetti, but mrs rabbit likes to put it in just about any dish. The flavor is extremely mild.

All my cameras are busy now on another project, but I'm sure I'll get around to doing more time lapse vids soon.

A grower near me sells Hericium (Lion's mane). He routinely sells for $8/lb. at his farm, at all the area farmer's markets, and he has deals worked out with a few local restaurants. Others he carries are blue oyster, shiitake, large portabello's (for burgers, etc.), regular common oyster, and I think I'm forgetting a couple others.

It was fun finding a grower when I was getting into the hobby, but it will make it hard to sell any in the area. He sells shiitake for $8/lb to, some of the cheapest I've seen...

Phalcon, are you having any luck with cloning of the Hericium? Mine is filthy with mold and I took a rather clean sample from within the fruitbody. A scary mold too! It's going to take a few hot agar pours and transfers to clean this puppy up.

Try cloning out near the ends rather than in the thick stem. I've also found the thick part of the stem to be ridden with bacteria, and that's normally the part on a mushroom we want to clone because it can be torn open to expose clean mycelium. Not so with hericium.

I don't recall anything sticking out as being horrid when I cloned this versus anything else and it is growing fine in culture. It was cloned from what I presume to be a clean lion's mane commercially grown, so maybe that's the reason? I'm sure the commercial grower started clean, and his growing area is quite clean as well. God knows wild mushrooms are never as clean, let alone Lion's mane. There may be something lying within my plates, but the hericium have slowly taken over all of them I've banked, and when I pulled one recently it was trying to pop out of the petri dish to fruit. Honestly these things grow so slowly I'm sure I would have seen a colony if there was something significant lying around.

Regretfully I've never done anything other than bank the culture though, so who knows. This was one I wanted to have around but I'm not quite ready to add that to the list mushrooms I was to tackle immediately. Culinarily I wasn't as impressed as I was with king oyster, and right now I'm just trying to add some variety to my dinner plate.

Man, i'll tell you that the one and only specimen i've tried to clone so far of the Hericium's has been a menace. At first the the attempt looked nice and smooth as far as cleanliness is concerned, but after the dish colonized a mold of a yellowish coloring had started to attack the mushroom mycelium. Now the 2nd transfer is on ice in the fridge with a decent amount of Trichoderma attacking it now. Now that i'm free for a couple of weeks, I will try to get this specimen cleaned up for use.

Nice stuff Roger. I hope I can acquire a clean plate to use for fruiting. The specimen I have is Lion's Mane and was very tastey! I'd love to be able to at least have a chance at a clean grow with it.

Have all of you noticed slow petri growth with this species? I have been using a strain i got from sporeworks and it was a little slower than most but I recently cloned a massive specimin and the clones were pure but very slow growing...

I received a free sample culture of Lion's Mane from spores101, and mine has been terribly slow. I had two jars that slowed to a stop now (I gave up after almost a month and took them out of the incubator). I made a liquid culture out of the rest two weeks ago and it is going pretty slow, while a shiitake from sporeworks is going nicely.

The Hericium culture I had grew horribly slow, but from what I've read (primarily GGMM) that is typical. For this reason Stamets recommends LC simply so you can pass it into grain with more inoculation points to speed up the whole process.

It's amazing to me the variance in growing speeds in media. A culture of Panellus stipticus I have will only grow a millimeter or two in a day across a plate. However, a nice Morchella esculenta culture of mine will go fill the plate with small fibers in 48 hours, I swear I should be able to see that sucker growing it goes so fast. Nearly all of these are on light malt extract agar that I purchased from fungi.com, usually with a small amount of my final substrates of alder shavings or straw added.

A good, clean culture of Hericium will grow like wildfire. That is how you'll know when you get it cleaned up from the contaminant molds. Mine will colonize a petri dish in four or five days, and a quart jar of rye berries in a week at room temperature. If I let my rye jars go for two weeks, the hericium is already pinning invitro, which is no problem. I simply spawn the rye and invitro pins of hericium right into the sawdust/woodchips and they start fruiting as soon as full colonization is achieved.

Filter patch bags are excellent for this species. Just cut a few slits in the bag above the substrate layer at full colonization and the fruits will form right in the bag.

The substrate recipe I've settled on for wood lovers is:
15 cups sawdust
1 cup gypsum
2 cups rice or wheat bran.

I use this recipe whether or not wood chips are to be added later. You don't need to adjust anything for the addition of wood chips. Just toss them in. The above recipe will make two 5 lb substrate blocks, or three blocks if wood chips are added.

Mix the dry ingredients together and add water until moistened, but much less than 'field capacity'. I get best results when unable to squeeze any water out even with a hard squeeze. Remember, you can always soak the substrate in a bucket of water after colonization if needed. Substrates prepared on the dry side will colonize much faster and be more resistant to contaminants.

Yeah, the clone I did had colonized the entire dish in only a matter of 2-3 days. Maybe a day more, but fast as hell regardless. I thought all was well and clean until the mold showed up a few days later on the mushroom mycelium.
