RR, what is the species of hericium, do you know? Here in NZ we have Hericium coralloides, and thats all I would be able to grow (anything that's not in NZ already is not allowed in at the moment, not without a hell of a lot of time, money and beaurocracy at least). What is the shelf life like of hericium? Are they something that is grown commercially or just for hobby cultivation?

I've never seen them grown commercially. Shelf life is poor. They also just don't seem to hydrate well if dried. The above is Hericium Erinaceus. It's one of our favorites, and very tasty. I like it best in spaghetti, but mrs rabbit likes to put it in just about any dish. The flavor is extremely mild.

All my cameras are busy now on another project, but I'm sure I'll get around to doing more time lapse vids soon.

A grower near me sells Hericium (Lion's mane). He routinely sells for $8/lb. at his farm, at all the area farmer's markets, and he has deals worked out with a few local restaurants. Others he carries are blue oyster, shiitake, large portabello's (for burgers, etc.), regular common oyster, and I think I'm forgetting a couple others.

It was fun finding a grower when I was getting into the hobby, but it will make it hard to sell any in the area. He sells shiitake for $8/lb to, some of the cheapest I've seen...

Phalcon, are you having any luck with cloning of the Hericium? Mine is filthy with mold and I took a rather clean sample from within the fruitbody. A scary mold too! It's going to take a few hot agar pours and transfers to clean this puppy up.

Try cloning out near the ends rather than in the thick stem. I've also found the thick part of the stem to be ridden with bacteria, and that's normally the part on a mushroom we want to clone because it can be torn open to expose clean mycelium. Not so with hericium.

I don't recall anything sticking out as being horrid when I cloned this versus anything else and it is growing fine in culture. It was cloned from what I presume to be a clean lion's mane commercially grown, so maybe that's the reason? I'm sure the commercial grower started clean, and his growing area is quite clean as well. God knows wild mushrooms are never as clean, let alone Lion's mane. There may be something lying within my plates, but the hericium have slowly taken over all of them I've banked, and when I pulled one recently it was trying to pop out of the petri dish to fruit. Honestly these things grow so slowly I'm sure I would have seen a colony if there was something significant lying around.

Regretfully I've never done anything other than bank the culture though, so who knows. This was one I wanted to have around but I'm not quite ready to add that to the list mushrooms I was to tackle immediately. Culinarily I wasn't as impressed as I was with king oyster, and right now I'm just trying to add some variety to my dinner plate.

Man, i'll tell you that the one and only specimen i've tried to clone so far of the Hericium's has been a menace. At first the the attempt looked nice and smooth as far as cleanliness is concerned, but after the dish colonized a mold of a yellowish coloring had started to attack the mushroom mycelium. Now the 2nd transfer is on ice in the fridge with a decent amount of Trichoderma attacking it now. Now that i'm free for a couple of weeks, I will try to get this specimen cleaned up for use.

Nice stuff Roger. I hope I can acquire a clean plate to use for fruiting. The specimen I have is Lion's Mane and was very tastey! I'd love to be able to at least have a chance at a clean grow with it.

Have all of you noticed slow petri growth with this species? I have been using a strain i got from sporeworks and it was a little slower than most but I recently cloned a massive specimin and the clones were pure but very slow growing...

This thread has to be one of the best ones I have ever seen here. Please dont ever hesitate to write things down in detail, I learned a few things reading though this one, I saved it back when it was 2 pages, now I just bookmarked it.
Dont ever assume "well everyone knows that" and write less.

I received a free sample culture of Lion's Mane from spores101, and mine has been terribly slow. I had two jars that slowed to a stop now (I gave up after almost a month and took them out of the incubator). I made a liquid culture out of the rest two weeks ago and it is going pretty slow, while a shiitake from sporeworks is going nicely.

The Hericium culture I had grew horribly slow, but from what I've read (primarily GGMM) that is typical. For this reason Stamets recommends LC simply so you can pass it into grain with more inoculation points to speed up the whole process.

It's amazing to me the variance in growing speeds in media. A culture of Panellus stipticus I have will only grow a millimeter or two in a day across a plate. However, a nice Morchella esculenta culture of mine will go fill the plate with small fibers in 48 hours, I swear I should be able to see that sucker growing it goes so fast. Nearly all of these are on light malt extract agar that I purchased from fungi.com, usually with a small amount of my final substrates of alder shavings or straw added.

A good, clean culture of Hericium will grow like wildfire. That is how you'll know when you get it cleaned up from the contaminant molds. Mine will colonize a petri dish in four or five days, and a quart jar of rye berries in a week at room temperature. If I let my rye jars go for two weeks, the hericium is already pinning invitro, which is no problem. I simply spawn the rye and invitro pins of hericium right into the sawdust/woodchips and they start fruiting as soon as full colonization is achieved.

Filter patch bags are excellent for this species. Just cut a few slits in the bag above the substrate layer at full colonization and the fruits will form right in the bag.

The substrate recipe I've settled on for wood lovers is:
15 cups sawdust
1 cup gypsum
2 cups rice or wheat bran.

I use this recipe whether or not wood chips are to be added later. You don't need to adjust anything for the addition of wood chips. Just toss them in. The above recipe will make two 5 lb substrate blocks, or three blocks if wood chips are added.

Mix the dry ingredients together and add water until moistened, but much less than 'field capacity'. I get best results when unable to squeeze any water out even with a hard squeeze. Remember, you can always soak the substrate in a bucket of water after colonization if needed. Substrates prepared on the dry side will colonize much faster and be more resistant to contaminants.

Yeah, the clone I did had colonized the entire dish in only a matter of 2-3 days. Maybe a day more, but fast as hell regardless. I thought all was well and clean until the mold showed up a few days later on the mushroom mycelium.
