It's many different species, many of which don't require a cold shock such as hericium, reishi, oyster, hypsizygus ulmarius, enoki, etc. Also remember, I supply spawn to a couple of the small local farms, so I certainly don't grow out and fruit all the grain spawn I generate.

Flushes from the Shiitake come about three to four weeks apart. I let the blocks sit dormant outside the growing area for ten days to two weeks after harvest to dry out. Removing from the greenhouses eliminates the risk of trichoderma because the blocks are exposed to the open air where trich can't thrive. After that, a 24 hour soak in cold water, usually outdoors unless it's too hot in summer or cold in winter, then they're placed back into the fruiting environment.

I'll get ya some gill shots on the next harvest.

The only time I grow large quantities of Shiitake is during the fall/winter when I can move the bags outdoors for the cold shock. There's no way I could do all that in two refrigerators. During summer, I only grow enough for our own use.

I finally gave up on my P nameko by the way. I think I must just have a crap culture. It colonizes very fast, and gets the red/brown slime on top and sides, but pins never develop. Finally, after two months I just couldn't keep up with keeping the trichoderma off them, even with washing them under the faucet or garden hose nearly every day. I was using sawdust/woodchips with quite a bit of wheat bran as usual, so that may have been the problem. The next batch I do, I'll try your suggestion about cutting down the wheat bran, and I think I'll leave out the wood chips to fight the green molds. My Shiitake do very well on sawdust alone, but of course I don't get as many flushes as I would with woodchips added.

Roger, do you notice any unpleasent flavor when you alow lions mane to grow that long? I always pick mine young to avoid bitterness. Also, how much do you normaly get off a block. I normaly get about 1lb off each lions mane block after 4 or so flushes. I noticed a couple aborted shiitake on you blocks, this is a problem I seem to be plagued with. The strain I have now is much better about that than the last one I was using but it still gives me some problems. Is this only a first flush issue with you strain? I never realy need to cold shock my shiitake blocks, I wonder if its not a strain related thing?

Also, does your H ulmarius colonize petris quickly? I just started a strain from spores and its growin pretty slow.

Does adding wood chips to sawdust blocks really give higher yealds or do the blocks just last longer/ give more flushes?

That Lions mane block had well over a pound from just that one flush. No, the flavor is excellent. At the top, you can see where it's discolored from dropping spores. I cut those parts off of course.

Adding wood chips makes the blocks last a bit longer, but in my experience flushes are smaller, and they're more succeptable to trichoderma.

My H ulmarius colonizes a petri dish in five or six days. Very fast growing.

Yea, shiitake is bad about mutants like that. I could have trimmed them off, but mrs rabbit likes them for soups, so I leave them on usually.

Cool, what kind of sawdust do you grow lions mane on? Is it supplemented with just bran? Where do you get bran, I can't find it anywhere cheap enough to use in bulk. I may have to get that strain from you...:dancing: :biggrin:

I get wheat bran from the local health food store. It's cheap in bulk. My 40 KG bag cost $30.

I'm using Alder sawdust because that's what we have in this area. Any hardwood will work though.

How in the world do you process 2,000 quart jars?  This is simpy mind-boggling to me.  Do you have a couple of AA pressure cookers and do a run or two each day?  What is the turn around time on restocking our spawn (are you making 2,000 quarts a month, week, quarter, etc.)?  Do you shake the jars more than once?  I'm guessing no, or that alone would be a part time job for you or Mrs. Rabbit, heh. 

Also, why do you use quart jars?  With such a large volume why not use half gallon or gallon jars, or bags? 

Once again thanks for all the good questions and responses.  I'm glad I'm not the only person producting excess spawn for 'experimental projects' but I'm more on par with double the spawn, not 10x :smile:

I have 4 AA 921's because that's the largest that can fit on my stove all at the same time.  When we're stocking the grow area, the PC's run 24/7 and the mrs and I work in shifts.  She's my slave labor, but thank god she doesn't read these forums or I'd be dead for saying that.  She still thinks she's co-owner of a family business. :wink:

I only shake jars once.  I don't even shake after inoculating with agar wedges, but simply drop them on top.  After a few days when the top begins to colonize, I shake for the one and only time.  I've been intending to get a paint can shaker, but haven't yet, so it's a muscle fatiguing job to shake that many jars.

I absolutely hate half gallon and gallon jars for spawn as well as  spawn bags.  They simply don't do as well as quart jars.  Of course, large filter patch bags are great for bulk substrates such as sawdust/woodchips.

You can find cheaper cultures, but you won't get the performance.

Wow RR, every time you post a pic or grow guide I get more and more inspired about growing these wood substrate species. Did you ever write up a grow guide for ganoderma? I know I've seen a lot of requests around for it but maybe I missed it.

Also, is there a link anywhere to your time lapse video you made of reishi? I found the post about it but the links didn't seem to work anymore. I love time lapse and I love reishi so I really want to see that vid!! The spore one was pretty neat.

Crap. I haven't had time to work on my website in months because I'm too busy filming my instructional DVD. I just checked and none of my time lapse links work. This really pisses me off. I need to find a good web host. I've paid these bastards $5,000 so far for hosting and advertising and I don't even come up in the first ten pages of google using my keywords and meta tag labels directly. I'll probably just take my website down. My DVD is going to be at amazon.com and bookstores anyway. I doubt I'll even be selling directly as I had originally planned. I'll try to find a way to get the time lapse vids back up though.
