Is it all right to mix the vermiculite and brown rice flour a few days before inoculation? Can i jar the substrate and sterilize (and just store them) days before inoculation? or is this running to high a risk for contam?

When you cook your jars properly, they should last a long time. Filter jars might dry out but should not become contaminated
Think about it this way (we'll use Progresso since we're all grown up) when you open a can of soup: do you worry about contamination or do you just suck down that tasty stew. You are making the same thing inside your jar. Its sterile untill You break the seal and let something in if you have done it right.
MMGG tec even suggests that you make em up several days in advance to see if contams are going to grow.
just pick a good tec and follow it to the letter, you'll do fine. Contrary to popular opinion this ain't rocket science

some vendors sell ready to go substrate in bags, which are not meant for immediate use for obvious reasons and it seems they're fine. So I guess the key is good sterilization.
