What problems may occur with fresh dung?

If I happened to have some cow pies of dung that were dry and aged. But I found one that was still fresh and moist, what problems may occur from using it?

Not really what problems, but WHY would problems occur?

Fresh dung may be too acidic? Too much moisture? Too many parasites?

a cow pie will make 1 or 2 shrooms at a time. sterilised or pasterise substrate explodes those figures.
Fresh dung is too acidic,add lime.
perlite offsets moisture

yea, i guess its not really a big concern for me anymore...just wondering why cow dung should be picked aged and dryed out...
