The Spaghetti Carbonara isn't really special, but I had the Grilled Sausage and Pepper Penne and that was really good and has a spicy taste to it.

are you going to cook it tonight?

CPK's Grilled Sausage and Pepper Penne: makes 4 to 6 servings


A. Marinara Sauce

1. 1/4 cup extra virgin olive oil
2. 2/3 cup minced onion
3. 3 tbsp minced garlic
4. 16 roma tomatoes, cut into 1/4 inch dice
5. 1/4 cup Chianti or other dry red wine
6. 2/3 cup minced fresh basil
7. 3 tbsp minced fresh oregano(or 1 1/2 tbsp dried)
8. 4 tsp salt
9. 1/2 tsp freshly ground black pepper
10. 1/2 cup tomato paste

B. Pasta ingredients

1. 1 recipe Marinara sauce(posted above)
2. 8 sweet and spicy Italian sausage links, about 6 ounces each
3. 1 pound dry penne
4. 1/4 cup olive oil
5. 3/4 medium white onion, thinly sliced
6. 3/4 medium yellow bell pepper, thinly sliced
7. 3/4 medium red bell pepper, thinly sliced
8. 2 tsp salt
9. 1/2 tsp freshly ground black pepper
10. 1/2 cup freshly grated parmesan cheese

Making the Marinara Sauce:

A1. Combine the olive oil, onion, and garlic in a non-stick saucepan and cook over medium heat until the onion begins to turn translucent, 3 to 5 minutes.

A2. Stir in the tomatoes, wine, basil, oregano, salt, and pepper. Bring to a simmer, then reduce the heat to low and cook, stirring occasionally, until thick but still fairly fluid, about 20 minutes. Stir in the tomato paste and continue cooking, stirring occasionally, for about 10 minutes more. Remove from heat and set aside.


Making the Pasta:

B1. Preheat a stovetop grill or the boiler. Grill or boil the sausages until cooked through and nicely browned, about 12 minutes, medium-low heat. Let them cool for a few minutes, then place in a covered container and refrigerate until thoroughly chilled, atleast 1 hour. With a sharp knife cut each link at a 45 degree angle into 1/4 inch thick elliptical slices. Set aside in the refrigerator.

B2. Bring a large pot of salted water to a rapid boil. Add the pasta and cook until al dente, 8 to 9 minutes.

B3. While the pasta is cooking, heat the olive oil in a large frying pan over medium heat. Add the onion and peppers and cook, stirring occasionally, just until the vegetables become limp, 3 to 4 minutes. Add the sausage slices and cook, stirring, about 1 minute more. Stir in the recipe Marinara Sauce, salt, and pepper and bring the sauce to a simmer. When it begins to simmer, sprinkle and stir in Parmesan cheese.

B4. Drain the pasta thoroughly and immediately toss it with the sauce in a large mixing or serving bowl. Serve family-style or transfer to individual serving bowls, evenly distributing the sausage and vegetables.

thanks trancedshroom... can wait to try that i love italian sausage in pasta....its dinner tomorrow night, it never ceases to amaze me that i always have everything on hand when i find a good recipe... I guess its a good sign that i like to cook everything from scratch...

I think the Tiramisu is the best recipe. It something that you make Sucky and sit down high as hell and eat all of it by yourself.

Thanks for the pizza recipe. I've been making pizzas since I was about 14 so I know a thing or two about pizza recipes. That's a good recipe however, the bit about putting it in the frig is nonsense. You can easily make a pizza pie on the fly from scratch with about 1 1/2 - 2 hours to go before cooking. Let the dough rise at room temp for about 1 1/2 and put in the oven.

But here's the big trick. Put the dough in a 425 oven without any toppings. Not too long. About 15-20 mins. Remove and put your tomato sauce (make sure it's warm or hot) and toppings on. Why do this? It keeps the dough from being mushy. Also since your cheese only needs several minutes to melt there's no point in putting it under the burner for 35 mins or you'll have a burnt blackened mess.

Also, keep your toppings simple. If you have good sauce and good dough the rest takes care of itself. I don't even like a lot of cheese on my pizza bc just like putting steak sauce on a good steak, with too much cheese you overwhelm the key ingredients - dough and sauce.

Since I woke up and am in an extremely good mood today, I am going to share a seasonal recipe from this resturant later on. Its before Thanksgiving, so if you want to plan to add it to your big dinner and really wow some people, this recipe is great!
