First time I've ever found these in all my years of hunting. 8LB of Hedgies! (Hydnum repandum)
Do these dry ok or am I going to have to saute them first and freeze?

Scuse the crap camera phone pic, still saving up for a digital SLR...

That's a big bag of hedgehogs you got there! Puts my thread to shame We have never tried drying them. "luckily" we've only been able to find as many as we can use in a couple days but I don't think I could eat 8 lbs. of them! They will stay in the fridge okay for almost a week but they get a little rubbery by then. As for drying, my hunch is that they will not dry well. This uneducated guess based on their similarity in texture and flesh consistency to chanterelles which do not dry well. With that many, I think you should dry some and see how they do.

If you don't like Chanterelles dried then I doubt you would like Hedgehogs dried. So, the best would probably be saute and freeze although I prefere to pickle them in olive oil. Pickling would probably be only worth the effort if you had twice that amount though.

I could have picked many more but it was dusk and I was being attacked by thousands of gnats!

I've generally sauteed and frozen them.
Happy mushrooming!

If there are that many then you should go back, I personally prefere them to Golden Chanterelles.

It was weird how they were growing. They didn't grow in a ring but grew in a wavy line that went on for about 300ft...

Oh yes, it's amazing to see the way they grow when there are many of them. When you find them like that is basically a trail of hedgehogs. When I find them there is usually a lime green blanket of moss and the way their pink/white color contrasts against the moss is wonderful.

Still haven't tried them yet but if I like them I'll be going back for sure!

Thats exactly describes the habitat I found them in. Mixed conifer and hardwood woodland with a carpet of moss overlooking a beatiful lake
