some budding boomers appear to be stunted... they are less than an inch in length and have slightly darker colored stems. while others on the cake look delicious. should they be plucked off?

Those are aborts. Caused from some envoirmental problems, or just the mushroom strain itself, also battles for nutrition in the substrate. A lot of the times you will see aborts next to bigger mushrooms.

You will want to pick these before they turn black, as it could lead to the rotting of the bigger ones. This is normal. As you progress in cultivating, you'll see less and less of them. They are still OK to eat, as long as they aren't completely black!
