the vines begin die long before you pick the pumpkin. The point of leaving them attached is to let nature take its course. The meat of the pumpkin basically protect the seeds. It doesn't need to stay attached though, it could very easiily be a pumpkin set in the middle of a area with loose dirt, such as a garden or compost pile would have. He leaves them attached because if he's just gonna let them grow why harvest and move them...

My mom used to make a pumpkin cheesecake and it is by far the best cheesecake I have ever tasted. I will be trying your recipie!

let it set a bit longer than the recipe reccomends, i find overnight makes it good and solid a few hours it seems not chilled enough.
