CPK's Santa Fe Chicken pizza
Makes 2

A. Salsa

1. 2 to 3 firm, red, ripe roma tomatoes
2. 2 tsp fresh lime juice
3. 1 tsp finely minced garlic
4. 1/2 tsp minced jalapeno
5. 1 tbsp chopped fresh cilantro
6. Salt to taste.

B. Grilled Lime Chicken

1. 2 five ounce boneless/skinless chicken breast
2. 1 tbsp fresh lime juice
3. 1/2 tsp Worscestershire sauce
4. 1 1/2 tsp soy sauce
5. 1/2 tsp honey
6. Pinch cumin
7. Pinch dried rep pepper flakes
8. 1 tbsp chopped fresh cilantro
9. 2 tbsp olive oil

C. Caramelized Onions

1. 1 1/2 tbsp unsalted butter
2. 1 small red onion, peeled and sliced 1/8 inch thick rings
3. 1/4 tsp red wine vinegar
4. 1 tsp soy sauce

D. Guacamole

1. 1 large, ripe, Haas Avocado(any will work)
2. 1 tsp fresh lime juice
3. 1 tbsp chopped scallions
4. 1/2 tsp finely minced jalapeno pepper
5. Salt to taste

E. For the Pizza

1. 1 recipe pizza dough
2. Flour for handling
3. 2 cups shredded mozzarella
4. 2 tbsp fresh chopped cilantro
5. 1/2 cup sour cream
6. 2 cups corn tortilla strips(Strips not triangles)

Making the Salsa:

A1. Combine salsa ingredients and set aside in refrigerator for 1/2 hour. Remove the salsa when ready to use and remove excess water.

Making the Grilled Lime Chicken:

B1. Prep hot grill or stove top. Mix marinade ingredients together. Marinate the breasts for 15 minutes.

B2. Grill the breast for 5 minutes on each side. Remove the grilled chicken from the grill and chill through. Cut chicken breast into 1/2 inch cubes and set aside in refrigerator.

Making Caramelized Onions:

C1. Melt butter in a small non-stick skillet over medium-high heat and cook onions, stirring, until they just begin to brown, 3 to 4 minutes. Add vinegar, reduce heat to Medium-low and continue cooking for 10 minutes, stirring to prevent scorching.

C2. Add soy sauce and cook 5 to 10 minutes longer, stirring. When done onions should be quite limp and caramelized brown.

Making the Guacamole:

D1. Cut avocado in half; discard pit and scoop the meat away from the skin, discard skin. Using a fork, mash the avocado in a clean bowl; quickly combine with remaining gaucamole ingredients.

D2. Place clear plastic wrap directly on the surface of the gaucamole mixtue and squeeze out air bubbles. Refrigerate until ready to use.

Making the pizza:

E1. Heat oil to deep fry temperature(375F, just short of smoking). Carefully add strips, turning as neccessary to produce an even golden yellow color, not brown. Remove tortilla strips and place on paper towel. Set aside.

E2. PLace pizza stone in midddle of the over and preheat to 500F for one hour before cooking pizzas.

E3. Distribute half the sauteed onions over the surface of the dough. Cover the onions with 3/4 cup mozzarella.

E4. Evenly distribute half the chicken over the cheese. Sprinkle and additional 1/4 cup mozzarella over the chicken.

E5. Tranfer pizza to the oven, bake for 8-10 minutes.

E6. When the pizza is cooked, sprinkle 1 tbsp cilantro over the hot cheese and slice the pizza. Serve with made salsa, sour cream, made gaucamole, and fried tortilla strips.

E7. Repeat with remaining ingredients for second pizza.

Margherita Tortilla Spring Rolls:

Ingredients:

1. 6 8inch flour tortillas
2. 1/2 cup butter(unsalted)(1 stick)
3. 2 cups shredded mozzarella cheese
4. 1/4 cup sun dried tomatoes
5. 1/3 cup checca, 2 pounds Roma tomatoes cut into 1/2 inch dices and 1 tbsp minced garlic
6. 6 ounces fresh water-packaged mozzarella cheese, cut into 1/2inch cubes
7. 1 tbsp finely slivered fresh basil
8. 2 tbsp freshly grated Parmesan cheese
9. 3/4 cup marinara sauce
10. tbsp minced frsh italian parsley
11. One recipe GRILLED LIME CHICKEN


Making the Checca:

1. Mix the roma tomatoes and garlic and cover them. Refrigerate until ready to use.



Making the Spring Rolls:

1. Preheat oven to 500F

2. Use a pastry brush to lightly, evenly coat one side of each tortilla with the softened butter.

3. Turn the tortillas over and evenly distribute the following ingredients over a 1 to 2 inch-wide stripon the unbuttered sides, just below the center of the tortilla from end to end: shredded mozzarella, sun-dried tomato strips, Checca, mozzarella cubes, slivered basil, and Grilled Lime Chicken.

4. Starting at the edge nearest and parallel to the strip of filling, roll up each tortilla into a tight cigar shape. As the tortilla is rolled up, place it seam side down on a baking sheet, keeping the rolls about 1 inch apart. Sprinkle 1 tsp of Parmesan cheese over the top of each roll.

5. Bake the rolls in the oven until heated through and lightly browned, 5 to 6 minutes. While the rolls are baking, gently warm the Marinara Sauce in a small sauce pan over medium-low heat.

6. Carefully remove the rolls from the oven, and slice each diagonally into 3 three equal pieces. Arrange the rolls on individual serving plates, garnish with minced parsley, and serve accompanied by warm Marinara Sauce.

Thai Chicken Tortilla Spring Rolls:

A. Grilled Teriyaki Chicken

1. 1 tbsp good-quality teriyaki sauce(Kikkoman)
2. 1 tsp olive oil
3. 1/4 tsp minced garlic
4. 1/4 cup minced fresh ginger
5. 1 four ounce boneless/skinless chicken breast

B. Spicy Peanut Sauce

1. 1/2 cup peanut butter
2. 1/2 cup hoisin sauce
3. 1 tbsp honey
4. 2 tsp red wine vinegar
5. 2 tsp minced ginger
6. 2 tsp roasted sesame oil
7. 2 tsp soy sauce
8. 1 tsp Vietnamese chili sauce(or dried chili flakes)
9. 1 tbsp oyster sauce
10. 2 tbsp water

C. Thai Satay Sauce

1. 1/2 cup canned cocnut milk(stirl before measuring)
2. 1/2 cup spicy peanut dressing
3. 1/2 tsp bottled Thai red curry paste

D. Spring Rolls

1. 6 8-inch flour tortillas
2. 1 stick unsalted butter, softened to room temp.
3. 3 ounces spicy peanut sauce
4. 1/2 cup shredded mozzarella cheese
5. 3/4 cup finely shredded carrots
6. 1/4 cup thinly sliced scallions
7. 1/2 cup fresh bean sprouts
8. 2 tbsp chopped unsalted roasted peanuts
9. 2 tbsp minced fresh cilantro
10. 2 tbsp freshly grated Parmesan cheese
11. 1 tbsp fresh chopped parsley


Making the Grilled Teriyaki Chicken:

A1. Preheat a stovetop or the broiler. In a mixing bowl, stir together the teriyaki sauce, olive oil, garlic, and ginger. Turn the chicken breast in this marinade and leave it to marinate at room temperature for 10 minutes. Grill or broil the chicken until cooked through, 5 to 6 minutes. Chill thoroughly in the refrigerator, then cut crosswise into 1/8 inch thick strips. Cover and refrigerate.

Making the Spicy Peanut Sauce:

B1. Combine sauce ingredients in a small pan over medium heat. Bring sauce to a boil, boil gently for 1 minute. Divide into 2 portions for use on chicken and pizza, set aside.


Making the Thai Satay Sauce:

C1. Combine all the sauce ingredients in a blender fitted with a steel blade. Blend until smooth. Transfer to a bowl, cover, and refrigerate.


Making the Spring Rolls:

D1. Preheat oven to 500F

D2. Use a pastry brush to lightly, evenly coat one side of each tortilla with sofened butter.

D3. Turn the tortillas over and evenly distribute the following ingredients over a 1 to 2 inch wide strip on their unbutterd sides, just below the center of the tortilla from end to end: the remaining Spicy Peanut sauce, and shredded mozzarella, grilled teriyaki chicken strips, shredded carrots, sliced scallions,bean sprouts, chopped peanuts, minced cilantro.

D4. Starting at the edge nearest and parallel to the strip of filling, roll each tortilla into a tight cigar shape. As each tortilla is rolled up, place seam side down on a baking sheet, keeping the rolls about 1 inch apart. Sprinkle 1 tsp Parmesan cheese over each tortilla roll.

D5. Bake the tortilla rolls in oven until heated through and lightly browned, 5 to 6 minutes.

D6. Carefully remove the rolls from the oven, and slice diagonally into 3 equal pieces. Arrange rolls onto serving plates and garnish with chopped parsley and serve with accompanied by the Thai Satay sauce.

Well, since this is October and we are in Fall I guess the Pumpkin Cheesecake would be an excellent choice. Matter of fact, I haven't ever had Pumpkin Cheesecake so I will post that if you like.

The Thai Chicken Spring Rolls are the closest to spicy, but I will try to later on to post the Sesame Dumpling recipe, that has a good zingy sauce and is my fav. Everytime I eat there I get the Sesame dumplings.

I do have a Jamaican Jerk pizza I will post next for you Flush.

CPK's Jamaican Jerk Pizza: makes 2 pies.


A. Jerk Chicken Pieces

1. 1/2 pound boneless, skinless chicken breast
2. 1 teaspoon olive oil
3. 2 teaspoons jerk seasoning
4. 1/2 teaspoon cayenne pepper

B. Caribbean Sauce
1. 1/2 tablespoon cold water
2. 1/2 teaspoon Wondra Flour
3. 1/2 cup sweet chili sauce
4. 3/4 teaspoon jerk seasoning

C. For the Pizza
1. Recipe dough(Istated in page 2)
2. 1/2 tablespoon Caribbean Sauce
3. 1 cup mozzarella
4. 1/4 cup roasted red and yellow peppers
5. 1/4 cup sliced yellow onions
6. 1/4 cup crispy bacon
7. 13 to 15 pieces Jerk Chicken (3/4-inch)
8. Sprinkling of additional mozzarella
9. 1 tablespoon chopped green scallions

To make Jerk Chicken:

A1. Preheat grill to 450 degrees F.

A2. In a clean mixing bowl, thoroughly mix the Jerk seasoning and Cayenne pepper and set aside.


A3. Line a cutting board with plastic wrap and place chicken breasts skin side up on the plastic wrapped cutting board.

Cover chicken breasts with an additional layer of plastic wrap.

Use a mallet to pound the thick side of the breast to 1/2-inch. The breasts should be 1/2-inch thick. DO NOT OVER-POUND.

Coat chicken breasts with olive oil in mixing bowl.

A4. Place oil-coated chicken breasts on a sheet pan with skin side up.

Using your fingers, sprinkle half of the jerk seasoning and cayenne pepper mix over one side of the breasts.

Turn breast over and with your fingers sprinkle the remaining of jerk seasoning and cayenne pepper mix over the other side of all breasts.

A5. Place the seasoned side of the breasts on a 450 degree F grill. Grill at a diagonal to the vertical grooves.

After 2 minutes rotate the breasts 45 degrees to produce diamond shaped grill marks. Continue grilling this same side for approximately 2 minutes longer (or until the outer edges begin to turn from pink to white and opaque).

Turn the breasts over and grill for approximately 2 minutes.

Rotate the breasts 45 degrees and grill for about 2 minutes more. The breasts must reach an internal temperature of 165 degrees F.

A6. Transfer the chicken breasts to a sheet pan in one well-spaced layer. Refrigerate immediately and chill to 40 degrees F.

Cut breasts into 3/4-inch pieces.


To make Caribbean Sauce:

B1. Add water to a mixing bowl.

B2. Slowly sprinkle flour into water while whisking at the same time. Break up any clumps.

B3. Add sweet chili sauce and jerk seasoning to flour mixture. Mix thoroughly.

B4. Add sauce to a non-stick saute pan and cook over high flame for approximately 5 to 6 minutes. Stir continuously.

When sauce is thickened transfer to a container and store at room temperature.

To make the pizza:

C1. Use a spoon to spread the Caribbean sauce to within an inch of the outer edge of a stretched pizza dough.

C2. Distribute ingredients to within 1/2-inch of the outer edge of the pizza.

C3. Distribute mozzarella over the Caribbean sauce.

C4. Distribute roasted peppers over the mozzarella.

C5. Distribute onions over peppers.

C6. Distribute bacon over the onions.

C7. Distribute Jerk Chicken over the bacon.

Sprinkle additional mozzarella over the entire pizza.

Garnish with scallions after cooking.
