Exploding Jars
    #6082639 - 09/20/06 04:36 PM (14 years, 7 months ago)

About a week ago I was in the process of stove-sterilizing my jars. About a half an hour later I hear a huge BOOM. I run into my kitchen and theres substrate EVERYWHERE, walls, ceiling, you name it.

What I did wrong was make the jars completly airtight by making a "sandwhich". one jar with holes, and another lid without on top of that.

I ended up just taking all of the lids off and went with foil, but could someone give me a tip on how to sterilize jars without explosive results?

Bingo. You need to have some avenue for gas exchange or you can expect enough pressure to build up from steam to blow your jars up. As long as the jars have holes for gas exchange, meaning CO2 expulsion during incubation, you can stack the jars anyway you like. Because you're doing stove sterilization, I assume you do not have a PC, you can only have a single layer of jars with water about 2/3 the way up the jar.

Do not immerse the jars fully in water.

or just prepare them according to the directions.

these are pf-cakes ill assume since you were steam sterilizing, so tyvek isn't the answer.

holes in lid, piece of aluminum foil crumpled over top.  voila.  pretty simple.  the foil protects too much moisture from escaping the jars and likewise from water dripping in, but its not sealed so tight as to create a vaccum when the jars cool, or allow pressure in the jars to build to explosive levels

rule of thumb, dont modify proven teks until you got the hang of things.  as you see sometimes you think you've got an idea to do things better, but it turns out much worse... the teks have been around and thought through really well... sometimes they dont come out and say WHY you should do it like they describe, so you'll just have to trust it for now.

Am I reading that right? You can stack jars inside a PC?

yup

ive actually stacked the squattier wide mouth half pints with regular ol' steam sterilization and they turned out fine too. its the steam that transmits the heat, not the water around the bottom of the jars they're sitting in

As long as the jars are not upside down, you can put them anyway that fits. I'm afraid I have to say this for some of newer members, but this does not apply to liquid cultures.  :smirk:
