California Pizza Kitchen Recipes

Hey all, I've got the California Pizza Kitchen recipe books the other week for my mother's bday. So I am opening up the books for ya'll since as far as I know the only way you can get these recipes is if you buy the book.

In case you dont know what the California Pizza Kitchen is, it is the BEST pizzaria in the world!!! It is a nice sit down resturant. So just state what recipe you would like and I will post it.

CPK is definitely not the best pizza place :lol:

the restaurants are very nice themselves but the pizza is far from the best

There are quite a bit and also not just pizza recipes either. I will post my favorite one, it is not pizza, but it is the best damn dessert I have ever eaten.....and I have eaten some top shelf pussy before! LOL!

CPK's Tiramisu.....

A. Sabayon-Mascarpone Mixture

1. 12 ounces Mascarpone Cheese
2. 5 Egg yolks
3. 6 Tbsp Sugar
4. 2 Tbsp Dry Marsala Wine
5. 2/3 Cup Heavy Cream
6. 1/2 tsp Vanilla extract

B. Sabayon Topping Sauce

1. 1 cup Sabayon-Mascarpone mixture
2. 2 tbsp dry Marsala wine

C. Espresso-and-Rum mixture

1. 1 1/2 cups freshly brewed expresso coffee
2. 1 1/2 cups dark spicy rum

D. Whipped Cream

1. 1/2 cup heavy cream
2. 1 tbsp sugar
3. 1/2 tsp vanilla extract

E. Tiramisu body

1. 20 good packaged ladyfingers

F. Garnish

1. 2 tbsp thinly sliced belgian semisweet chocolate

Now to making this delicious dessert!!!!

Making the Sabayon-Mascarpone mixture:

A1. Put the mascarpone in a mixing and beat with a spatula until smooth and creamy. Set aside for 1 hour.

A2. In a seperate mixing bowl, combine the egg yolks, 4 tbsp of the sugar, and the Marsala and whisk until blended. Transfer the mixture to the top half of the double boiler and place it over simmering water at medium heat. Beat the mixture until tripled in volume.

A3. In a mixing bowl, combine the cream, the other 2 tbsp of sugar, and vanilla extract. With wire whisk or electric blender, beat the ingredients until soft peaks form. Use rubber spatula to fold this whipped cream mixture into the room temperature mascarpone. Then gently fold the chilled egg mixture into the whipped cream-mascarpone mixture. Cover and refrigerate.

Making the Sabayon Topping mixture:

B1. In a mixting bowl, stir together 1 cup Sabayon-Mascarpone mixture and the Marsala. Cover and refrigerate.

Making the Espresso-Rum mixture:

C1. STir together espresso and rum. Cover and refrigerate.

Making the whip cream:

D1. In a mixing bowl, combine the cream, sugar, and vanilla extract. With a whisk, beat the mix until soft peaks form.

Making the Tiramisu:

E1. In a mixing bowl, fold 1 cup of the Sabayon-Mascarpone mixture into 1/2 cup of the whipped cream. Spread a small amount of this mixture in the bottom of a 10-x-6inch baking dish, forming a 1/8inch deep layer. One at a time completely submerge 10 of the ladyfingers in the Espresso-Rum mixture for a second or two, then transfer to dry surface. Gently place the soaked ladyfingers in the bottom layer of Sabayon-Mascarpone mixture. Organize them! Spread the remaining Sabayon whipped cream over the ladyfingers and gently but firmly tap the pan on the work surface to work out the air bubbles in the sauce. Smooth the surface with a spatula. Soak the remaining ladyfingers and arrange them at "right angles" with the bottom ladyfingers, and tap the pan again to rmove air bubbles. Smooth the surface with a spatula. Cover and refrigerate for atleast 12 hours before serving.

Serving:

F1. Cut into Tiramisu to form 6 portions and transfer to chilled plates and pour the Sabayon Topping sauce over each portion. Then sprinkle with you choclate garnish.




I paired the alphabetical letters from the ingredients of each mixture with the letters that explain the proceedure of making it. I hope you enjoy and will put more recipes up for request. My only wish, since these are really fucking long to write out is if I can get a 5 Shroom rating from people who request the recipe of choice. If it gets to excessive, I might just ask to if I can mail you copies for a minor trade or something.


PLEASE ENJOY, this is my favorite place to eat Tiramisu and by far has been the best dessert(this one especially) I have ever tried.

sorry but the food i've gotten at several CPKs in my area was very average and mediocre

i'll say it again, the actual restaurants are beautiful and they have a really nice oven

I can understand some of the pizzas being mediocre, but I have had great experiences with them, plus their pastas are really good......but it is all about the Tiramisu!!!!!!!!!!!!!


The Rustica Pizza is fantastic.

Actually Pizza Hut makes a better Pineapple pizza better than they do.

I actually like the frozen california pizza kitchen pizzas better than the ones at their restaurant for some reason

Well there are a lot of decent pizzas in their book that I would like to try, so I dont know, but I will try them. I will list the pizza's that are in their book. Unfortunately, the Jamaican Jerk Pizza isn't in there nor the Rustica(my fav.).

The Original BBQ Chicken pizza

Santa Fe Chicken pizza

Tandori Chicken pizza

Thai Chicken pizza

Chicken Teriyaki pizza

Mushroom, Pepperoni and Sausage pizza

Goat Cheese pizza

Shrimp Scampi pizza

Those are the pizzas and there is another book and a quarter of a book of recipes also. I have pastas, desserts, appetizers, soups, their famous salads and sides.

Just try not to knock their food too much, I think it is good and I am willing to share them with the people I enjoy talking too.

For the Pizza Dough:

1 tsp yeast
1/2 cup plus 1 tbsp warm water(105 to 110F)
1 1/2 cups bread flour or all purpose flour
2 tsp sugar
1 tsp salt
1 tbsp extra virgin olive oil plus 1 tsp for coating

Making the dough:

1. Dissolve yeast into the water and set aside for 5 to 10 mins. Be sure that water is not hot.

2. Combine all ingredients into a electric mixer(or if you do not have one, I guess mix with hands)*charles, except for the extra teaspoon of olive oil. and combine them with the dissolved yeast. Do not pour the salt directly onto the yeast water. When using the electric mixer, use the lowest 2 speeds to mix the dough. Mix for 2 to 3 minutes until the dough is smooth and elastic.

If you are mixing by hand use a wooden spoon and pour the liquids into the middle by making a "well." Once intial mixing is done you can lightly oil your hands and knead it yourself for 5 minutes.

3. Lightly oil the dough ball and the interior of a 1-quart glass bowl. PLace the dough ball in the bowl and seal the bowl with clear plastic wrap. Set aside at room temperature until it rises the dough to double in bulk. This will take 1 1/2 to 2 hours.

4. Pounch down the dough, re-form a nice round ball, cover with plastic in the same bowl and refrigerate overnight.

5. 2 Hours before making your pizza, take dough out of the refrigerator. Use a knife to make 2 equal dough portions. Set aside until ready to use make your pie out of the dough.

6. Take flour and sprinle on surface where making your pie, and sprinkle the pie itself. Use hand to stretch dough into a 9 inch diameter.

There is much more to this stretching the dough.....but I used to work at Dominoes and thats how I did it. The way they do it is extensive and is to much to type and basically doesn't do anything for the pie dough.

The Original BBQ Chicken Pizza! Makes 2 pizzas.

A. BBQ CHicken pieces
1. 10 ounces boneless/skinless chicken breast,
cut into 3/4 inch cubes
2. 1 tbsp olive oil
3. 2 tbsp favorite sweet and spicy BBQ sauce

B. For the pizza
1. 1 recipe pizza dough
2. Flour for handling
3. 1/2 cup of fav. sweet and spicy BBQ sauce
4. 2 tbsp shredded smoked Gould cheese
5. 2 cups shredded mozzarella cheese
6. 1/4 cup small red onion, sliced into 1/8inch pieces
7. 2 tbsp chopped fresh cilantro

Making the BBQ chicken:

A1. In a large frying pan, cook the chicken in olive oil over mdeium heat until just cooked, 5 to 6 minutes. Set aside in refrigerator until chilled through. Once chilled, coat the chicken with 2 tbsp BBQ sauce, set aside in refrigerator.

Making the pizza:

B1. Place the pizza stone in center of oven and preheat to 500F for one hour before cooking pizzas.

B2. Use a large spoon to spread 1/4 cup BBQ sauce evenly over the surface of the prepared dough within the rim. Sprinkle 1 tbsp shredded smoked Goulda cheese over the sauce. Cover with 3/4 cup shredded mozzarella.

B3. Distribute half of the chicken pieces over the cheese evenly(Approx. 18 pieces). Place approx. 18 red onion pieces over the surface. Sprinkle an additional 1/4 cup of shredded mozzarella over the top of the pizza.

B4. Transfer the pizza to the oven, bake until golden brown, 8 to 10 minutes. When pizza is finished, sprinkle 1 tbsp of cilantro over the pizza.

B5. For an extra pizza repeat process with the left ove ingredients.

There you go Shroomish, I hope you enjoy your own CPK pizza that you will make......send me a slice :grin:

Thai Chicken Pizza: Makes 2 pizzas

A. Spicy Peanut Sauce
1. 1/2 cup peanut butter
2. 1/2 cup hoisin sauce
3. 1 tbsp honey
4. 2 tsp red wine vinegar
5. 2 tsp minced ginger
6. 2 tsp roasted sesame oil
7. 2 tsp soy sauce
8. 1 tsp Vietnamese chili sauce(or dried chili flakes)
9. 1 tbsp oyster sauce
10. 2 tbsp water

B. Thai Chicken pieces

1. 1 tbsp olive oil
2. 10 ounces boneless/skinless chicken breast,
cut into 3/4 inch cubes

C. For the pizza

1. 1 recipe pizza dough(I stated how to make in another post)
2. Flour for handling
3. 2 cups shredded mozzarella cheese
4. 4 scallions, slivered diagonally
5. 1/2 cup white bean sprouts
6. 1/4 cup shredded carrot
7. 2 tbsp chopped, roasted peanuts
8. 2 tbsp chopped fresh cilantro

Making the Spicy Peanut sauce:

A1. Combine sauce ingredients in a small pan over medium heat. Bring sauce to a boil, boil gently for 1 minute. Divide into 2 portions for use on chicken and pizza, set aside.

Making the Thai Chicken:

B1. Cook the chicken in olive oil over medium-hegh heat, stirring, until just cooked, 5 to 6 minutes. Do not overcook. Set aside in the refrigerator until chilled through. Once chilled, coat the chicken with 1/4 cup of Spicy Peanut sauce. Set aside in refrigerator.

Making the pizza:

C1. Place the pizza stone in the center of the oven and preheat oven to 500F before cooking pizzas.

C2. Use a large spoon to spread 1/4 cup Spicy Peanut sauce evenly over the prepared dough within the rim. Cover the sauce with 3/4 cup shredded mozzarella cheese.

C3. Distribut half of the chicken pieces over the cheese, followed by half of the green onions(scallions), bean sprouts and carrots, respectively. Sprinkle an additional 1/4 cup mozzarella over the other toppings and top the pizza with 1 tbsp chopped roasted peanuts.

C4. Transfer the pizza to the oven; bake until crust is golden brown and center is at bubbly, 9-10 minutes. When done, remove from oven and sprinkle 1 tbsp of cilantro over pizza.

C5. For the second pizza, repeat process with left over ingredients.

There you go Daimyo, enjoy the pizza. I would surely appreciate a 5 shroom rating to get my ratings back up.....but thats up to you.
