time till pinning?

hello all ive been reading this site for a month or so now and just registered for some help with a setup. ive done other similar projects in the past and am pretty educated on plant growth, wanted to see how i could do with non green plants. im using pf-tek in a 20 gal container with wet perlite for humidity, monitoring humidity and temp every day with a digi min/max. i got all cakes that were made to colonize fine without any contams and right now i have them getting 12 hrs or so of indirect sunlight(by a window that dosnt get direct light) and fanning the chamber every 3-4 hrs give or take but 4-5 times a day minimum. my temp is holding between 73-78 and humidity between 94-96%.
i did my cakes in 3 cycles to spead out the maturing time and my first cakes have been in for 5.5 days now and arnt showing any signs of pinning. the other 2 cycles that are in now look to have caught up with the first ones as far as mycelium growth on the cakes. i did not dunk them first or cold shock them. ive read through the FAQs and i think i may have birthed them a day or 2 early or more, i did a day after each jar had fully colinized the cake, making sure there was no uncolonized exposed area. i have a few cakes left that finished colonizing last night i'll wait till a reply to birth them.
should i be worried about no pins? theres no signs of any contams, cakes are just growing the fuzzy mycelium and not fruiting. i had some plants a year ago that did the same thing, took a long time to change from fruit to vegg, can mushs do the same thing?

fast reply thnx. yeah thats kinda what i was thinking. i'll do that with my last batch i have waiting right now.
q's... whats FAE(free air exchange? all i could think of), is my humidity too high? hows my temp? i have but am not using a water heater because i can hold em at 85 or so outside for incubation, and i think the 73-78 temp is ok? i want to case my next go at this but wanted to keep my variables to a minimum my first time around to get a grasp on what im doing, could i do a few cakes cased or covered in vermiculite on the second flush without any obvious problems?

FAE = fresh air exchange
you're doing everything fine. the only thing you're not doing right is being patient. 
pins on cakes come in 10 days on the average. sometimes a little less sometimes a little more. keep on doing what you're doing and they're going to turn out fine.

ahh alright.. what about caing the second flush.. or at least covering in vermiculite? worth the risk of damaging the cakes?

covering in verm = great idea.
casing after a flush = not so great.
when you crumble cakes to produce a casing, the pieces stitch together into a uniform substrate block. once a cake has produced mushrooms its no longer in its vegetative growth stage, and will have a real hard time stiching back together (not to mention colonizing a casing layer). even if it does, it will be wasting time, energy, and resources doing so when it could have just been producing the next flush for you. if you want to case, do yourself a favor and use freshly birthed cakes.

makes sence, kinda sounds like dont clone a budding plant. i'll give em a coat of wet verm after i get a flush off em. should i sprinkle em, roll em, or what for covering them in vermiculite. i dont wana bruse the cakes or touch them for that matter. also dunking should be done between flushes but im guessing before i coat em in vermiculite?
