wbs flour in pf cakes
    #6036402 - 09/06/06 08:21 PM (18 years, 4 months ago)

After a year long break I'm back at it. I made a batch of pf cakes using ground wbs instead of brf. I didn't have a pc so I boiled the jars for 90 mnutes, and all 20 contamed with wet spot. I took that as a sign to break down and buy a pc. Made another batch and pc'ed for 45 minutes. My question is this, will the 45 min pc be enough to kill the bacteria, or do I need to do something different to be able to use wbsf?

I do my jars for somewhere around 45 minutes and they are always fine. Squirt some eggs in there!

45 minutes should be fine if you start your timer only when your cooker is at 12-15 psi. I always pull mine off after about 45-50 minutes, but I let it cool all the way down without opening the PC. I am sure that I am getting at least another 10 minutes of cook time this way. I would go longer under heat except after running out of water once before (using shorter wide mouth jars) letting it go the full hour.
