Breaking up Mycelium

My friend has had 6 grain bags incubating for a while now and they are almost done. His previous experience was with a grain jar that seemed fully colonized on the outside and seem to do very fine. For a week he let it set when the outsides appeared all white, but to his dismay when he broke it up the center was still very grainy and a casing was ruined. Now, my question is with these bags my friend has, would it be safe to breake up the myclium in the bag before casing/fruiting? Will the network of mycelium heal up fine or will it be very scattered and maybe damaged? My friend thinks the mistake he made last time was not shaking up the grain after inoculation distributing the spores all around. He did it this time with the bags and hope there is an even distribution of mycelium inside and out. Any information about this would be great! these forums never let me down.

If they've never been broken up, I'd break them up now even though they're almost done. Just knead the mycelium thru the bag in your hands and also shake the bag. Mix everything around well and leave it to sit. Within two to three days, it should have all knitted back together into a whole. Give it another day or two after that, then use.
