I don't think the type of stovetop makes a real difference. Gas is typically a little easier to regulate heat with. But other than heat source - no major diff.

It usually has to do with the owner's manual of the PC...ones with a concave bottom aren't recommended for use with electric stoves because they supposedly won't heat properly due to the section of the bottom not in contact with heat. Personally, I think that's bullshit, cuz my PC has a concave bottom and works just fine on my glass top stove but I'm no physicist, so I suppose results can vary.

That happen to me everytime. I have to manage to balance my PC on the side of my stove, so that about 30% of my PC bottom touch it. Cause if i put in the middle, there's so little PC touching the stove that nothing happen.

I try one with a friend who has spiral shape stove. It works great cause the weight of the pc curve the element to its shape.

As for the gas stove, the main advantage of gas is that when you start it, you're already at max T°, and the T° distribute itself more easily(cause fire isn't solid). With electric stove, you have to wait for the T° to rise. So gas make it more easily to control the T°.

That's why most restaurant prefer gas to cook.

Gas responds much quicker when adjusting temp making hitting 15psi faster/easier.
