roast pig

First - bring your pig to your prep area, put it on ice and cover till you are ready to prep your swine.



Get your area ready for prep - get your seasonings, bbq sauce and whatever else you want ready for the pig. I peeled 8 heads of garlic and chopped 4 onions and 4 green peppers to stuff the pig with.



Drink beers until you are ready to stuff your pig. Cut the excess fat off the pig. If you have to much it can start a fire in the BBQ. We made cuts in the meat and stuffed each hole with a clove of garlic, a chunk of onion and a chunk of pepper. Then have another person inject the pig with bbq sauce every couple inches.



Drink more beers and continue - this took us about 3 hours



When you have done both sides, load the pig unto the BBQ.



This bbq has a square "sqeeze chute" that you put the pig and and squeeze it together so its tight when it rotates.

Stop giving pooch beer, he's drunk and tired - the leaf rake thingy looks like a nice place the sleep.



This pig was 180 lbs dressed so its gonna take about 10 hours to cook at 500 degrees.



When the internal meat temp is 160 you are done!



Let the meat rest for 30 minutes and cut and enjoy.

Sorry, but this was done for my wedding reception - I didn't have time to take any pics after the pig was done.

I can assure you - it was awesome!

Pig roasts are the best, I'm going to one this weekend. It's more fun when the pig still has his head though.

i've helped roast several over pits, hard work but worth it. we actually kill the pig, not get it from the store.

he doesn't eat people food, only beer when he's at a party

he's an english breed, so he's short and stout - he weighs 85 lbs

back to the pig.....

I have a bunch of meat left over - any suggestions???

I plan on doing pork enchiladas in a red sauce and I have done pulled pork sammiches several times - they were rad.

Any pork recipes handy????

Bean and pork soup? Pork n beans? Suggestions?

Here's my pig roast festivities this last weekend...


The pig, so cute.


Stuffing him with garlic.


Prying his jaws open with steel rods to get the apple in his mouth.


Approximately 8 hours later...


Even cuter then before.

I would definately do bean and pork soup.

And regular baked beans in the crocker with extra pork.

sweet at least it was a local animal not some hormone goosed commercial swine. did you get to slay the beast as well? hogs have some really thick skulls, i think remember a 22 not even going through. they ended up just bashing its head with a sledge hammer. i would like to try a cochon de lait, roasted baby suckling pig. cant imagine how sweet and tender that has to be.

The pig we had was about $250'ish and was about 75lbs, grown locally.
