Coffee is acidic but the spent coffee grounds have a neutral ph, all the acid is soluble in water and comes out during the brewing process.

I'm sorry to contradict you, but spent coffee still has a low pH. This is a sample from a handful of spent coffee grounds with coir.

Don't make me dig out my ph meter, I've never tested coir, just coffee.

What's the highest coir:coffee (grounds) ratio that people have used sucessfully?

I found oyster myc to colonise straight coffee very slowly (compared to straw); does a higher proportion slow down cubie colonisation?

My intuition would be that the addition of straw would speed up either one (?)
