Keeping moisture inside the jars?

I don't think I have the need for an incubator because I have a room that is at a constant 79 degrees and I can just put it in a dark place. What hasnt been clear to me is the cakes drying out as the mycelium grows. I have micropore tape over the 4 inoculation holes and the lid is sealed tightly. I notice that the cake shrinks a bit but im not sure if that means its getting TOO dry. Is it a good idea to keep the jars inside a sealed ziplock bag or should I just leave it?

just leave it. its normal.
the cake shrinks as the mycelium digests it, and pulls it in together into a nice solid chunk... its not drying out.

I think one of my jars has too much moisture and there is no signs of colonization. There are little droplets on the sides of the glass but do you think that is the reason the spores arent germinating? It has been 5 days since inoculation with the B+ strain.

Ah water is also being used as part of the process FYI as you said this is normal, I myself leave the foil over the lids which helps stabilize evaporation. This is why dunking initially is so important BEFORE YOUR FIRST FLUSH! People seem to not realize this or simply ignore it I'm not really sure why many do not comprehend this?
