In the PF TEK it states that "natural" water that is rich in organics is the best water and yields better crop. I know that you are about to steam sterelize the jars so it would kill most possible contams. Wouldn't it also mess with the waters organics? I mean wouldn't that make it pointless to go out to a lake or stream to get "natural" water?

from what ive learned "natural" water has bacteria that you have to kill off by sterilizing, but it also has other things that dont die from the sterilization process. I assume it has more beneficial nutrients in it than regular tap water. So its not pointless but also not necessary. someone else should know more...

More natural water will have more organic vitamins and minerals than distilled/deionized water. It'll have bacteria, but once they've been sterilized and killed, those dead bacteria can also become mycelium food.
I'm still wishing there was a way to add sterile vitamins once the whole thing has been sterilized. Vitamins can't survive high temperatures or pressures, so PCing tends to destroy almost all of them.
Also, I will caution you about tap water for one reason: if you live ina city, or anywhere connected to a municipal water supply, you will have chlorine in your water. From what I've been told, chlorine has the ability to cause problems. So, I'd reccomend you go find a natural spring, etc, and get the water from there.

I use plain old new york tap water.... It makes great pizza and bagels too.

i use spring water from the store its cheap, no chlorine, and its got nutrients
