Coffee isn't near neutral, it's acidic, and you wouldn't want to use it in your casing layer, because ideally, a casing layer should be non-nutritive... You don't want your myc to eat your casing layer, you want your casing layer to provide a great pinning environment for your myc.

You can use peat moss/vermiculite, just vermiculite, moisture control potting mix, polymer crystals... Anything with a low amount of nutrients will work great. If you start adding things like coffee to your casing mix, you'll get your casing layer colonized, and possibly overlaid. (which is bad)

I hope I helped... I add spent coffee grounds to my BULK substrate, but never to my casing layer.

Also, don't forget to lime the coffee when adding it to a bulk substrate. Coffee grinds average around 4.5 to 5.5ph. That's very acidic.
