I just finished dunking my thailand koh cake as prescribed by RR. Can somebody tell me what the cake should feel like after dunking. Is it supposed to feel REALLY waterlogged? I dunked it for about 18 hours.

you shouldn't be feeling your cakes at all, they're delicate.
dunking is a safe procedure. the cake will only absorb what it needs. ive left cakes to dunk for 4 days before due to uncontrollable circumstances, and they were not water logged and fruited fine.
i can't tell you how they're supposed to "feel" because like i said, i don't feel my cakes! obviously the cake is going to be all wet when you take it out of a dunk... it was just submerged in water after all. trust that its ok, don't screw with the cake, and you'll see it fruit just fine i presume.

I agree. My cakes felt like a combination of rubber and soakage.
Roll 'em and fruit 'em. (:
