i guess it depends on your interpretation of very slowly. pins do move slowly from the knotting (primordia) stage, to the actual pin stage (where the cap becomes visable) but once they reach about 1/4" in size, they will take off, literally doubling in size about every 24 hours or so to completion. while its true that a water logged substrate produces really fat slow moving pins, the speed at which they grow is a combination of all your environmental factors.
its normal for there to be water droplets on the surface of the casing, on the mycelium that's poked through, and on the sides. some of what you see on the sides and bottom may even be metabolites excreted by the mycelium itself. its normal and not to be worried about unless you see large puddles developing somewhere.
don't take them out of the FC. if in your judgement things are too wet, increase the amount of fresh air you're giving them - fanning them more often will be a more gentle means of removing some of the excess moisture. as your mushrooms begin to mature, they'll soak up moisture very rapidly anyway.

If you got pins, you PASSED the critical point IMO
Just keep doing what your doing FAE light and high humidity
they will shoot up, they always catch me by surprise!
