you could try placing the cakes directly onto the perlite until you see the first signs of pinning. this will help the cakes absorb as much moisture as possible before fruiting. this seemed to help one of my dry cakes i forgot to dunk. try to handle them as little as possible as this will only cause bruising, and negatively affect growth.

You can certainly dunk them overnight at room temperature this won't hurt pins and will definitely help rehydrate them. GL
