I ask Workman in a PM, but figured I d ask the same question here as well. Does anyone know if there is any nutritional value to the edible mushrooms such as the pink oyster?

This is directly from Stamets GGMM "Nutritional content: Not fully kown to this author. Reported that the mushrooms grown from unsupplemented wheat straw compared to wheat straw supplemented with cottonseed powder resulted in protein contents of 30 to 36%. Supplements and spawning rates have a direct impact on the protein content of the mushrooms grown." This is from the pink oyster chapter in that book.
