I Mixed my coir and my spawn together about a week ago and i checked it today the myc. is starting to pop through and its coming up like little stars kinda wierd. Just wondering if that was normal because when i would do Hpoo it never looked like this? Also what is the normal time that it takes to incubate this around 2 weeks right? Thanks friends

its normal... i know what you mean by the 'stars'... its rhizmorphic growth poking through the top, which tends to be more apparent on coir than other substrates. soon it should be all covered and you'll have a nice fuzzy white block of substrate.
2 weeks is a little on the long side, it might finish up sooner. it depends of course on any number of things, your spawn ratio, how agressive your mycelium is, the moisture content of the coir, and the temperatures of the substrate itself.

max. in the center.
meaning like 75 outside the container.

really hard to say. a colonizing substrate generates some of its own heat. depending on how big of a container you're working with, it can be quite a bit of heat. so you can't really judge the air temperature, its the temperature of the substrate itself - and that's sort of hard to measure without screwing with the substrate itself (or unless you have one of those fancy laser thermometers ) a large tray, a monotub, something of that size, does fine at room temp, because it will raise several degrees above room temp. you can stick smaller trays in an incubator, but keep it low, probably high 70's would be wise. better to be on the safe side, if it gets too warm, bacteria can take over, or it can even ferment.

What is funny is i do have one of those laser therms. for work i use! What do you think should be the temp inside somewhere around 80-84?

yep, that would be reasonably close to optimal while still playing it safe... remember 86 is optimal, but even still with one of those laser gadgets you'd be measuring the surface which would be a few degrees cooler than the inside... but if it reads something like 80-82 at the surface of the substrate my guess is you'd be good to go.
one of these days im gonna risk jabbing into the sub with one of those pointy metal thermometers to see how much difference the inside is on a given sized substrate, rather than guessing all the time.
