Pre-mature birth?

I have one jar that is close to finishing colonization...but not quite, (I'm still waiting on the bottom). The mycelium has consumed the substrate at a very sloow pace. I have been waiting for the jar to fully colonize for over 30 days. There are signs of primordia but my question is would it be safe to birth this cake pre-maturely or wait for it to finish?........if it does.....
