Will this mess up my jars?
    #591845 - 03/28/02 11:51 AM (22 years, 10 months ago)

I recently made an incubator to speed along colonization. My jars (PF-style half-pints) were 50%-75% colonized when they went in the incubator, tape off, inverted. The incubator is a cooler with some water at the bottom and a fishtank heater in it set to 83 degrees F. There's a rack thing keeping the jars out of the water. The temperature is nice, but it's way humid in there. Tons of condensation. They've been in there for about a day. I'm getting worried about all this condensation. Should I? Is it a problem? Is this a contamination risk or anything? If it is, are my cakes gonna be ok if I take them out today?

I's definately a risk but  I'd say people have done worse and
been OK. I have heard of jars half submerged. You could
place the heater in a container big enough to hold it. Or the
better you insulate the incubator, the less condensation you
will see. You might want to dry the walls and spray a little
h2o every few days. But I don't think you're doomed from
one night in there. Hope that helps. :peace:

or you could just put a container inside the first that sits in the water and holds your jars......my friend does it and it works very well.
