Marinara/Pasta sauce???

Well I have HUGE influx of tomatoes this year :smile:

With all this rain as of late, the plants really went nuts!

So as opposed to just canning them or freezing them, I want to make some sort of marinara sauce.

Anyone have a good recipe for this?

Or other suggestions for tomatoes?

tomato, onion, garlic and herbs in a big pot set to simmer for 30-40 minutes :thumbup:

i dont know any written recipes but its pretty hard to screw up marinara, just dont over-spice it

i've put green and red peppers in marinara too, its killer

Cut them in wedges, toss them in some kind of oil/garlic/herb mixture and dry them in a dehydrator.  Or if you don't have a dehydrator, you can do it on racks in a 200 degree oven.  For whatever reason the oven ones don't seem to keep as well as store bought or dehydrator-dried tomatoes so you should keep those in the fridge or freeze them.  Making your own dried tomatoes tastes way better.  You should definately dry them if you can see yourself eventually getting tired of marinara.

As for marinara, SpicyTunaRoll is on it.  Don't fuck with the spices too much, you actually get to have fresh tomatoes as the base :laugh:.

you can freeze the sauce too. Freezing basic sauce can lead to spaghetti and meatballs in January when the snows are blowing...I'd rather freeze sauce than bottle it.
Don't forget to preserve the basil and parsley.

You can also make tomatoe salad and brushetta
