i just finished my first flush of cakes...can i turn them into casings now?

I wouldn't. They've already gone from vegetative growth to fruiting. Some guys have reported limited success doing that, so I won't say it doesn't work at all, but in my opinion, you'd be better off dunking and getting another flush pinning in a few days, as opposed to waiting for it to colonize a new substrate.

If you want to case or spawn to bulk, best performance will always come from fresh, rapidly expanding mycelium, not a previously flushed cake.

very true. Spawning to bulk is very easy as well.
