Medium on a stove IS boiling and will build to pressure just fine, will just take a little longer. You don't put LC jars in a P.C. on high, now do you?

> Medium on a stove IS boiling and will build to pressure just fine,
You need to reach boiling and pressure BEFORE all the water evaporates or steams away. Medium isn't going to reach boiling in a reasonable amount of time. Go try and see how long it takes you to get tap water to boiling on medium, ha!
> You don't put LC jars in a P.C. on high, now do you?
Of course I do. Your LCs would be highly caramelized if it took you hours to get up to temp at medium.
It sounds to me like you've never used a pressure cooker before. Maybe you shouldn't be giving out advice on using them then.
On my stove, which is the most standard stove you'll find, the running temp for the cycle is in the bottom third of medium-high. It would NEVER reach temp or pressure at medium. I put it on high until it reaches pressure then back it off to the lower side of medium-high.

i went to 20psi yesterday for the first time on my PC nothing bad happened as far as i could tell.
well i started to PC some LC just now and the blow-out valve in the middle of the top did just that, blew out. there is a little tiny hole in the rubber and now it wont hold pressure until i replace it. fortunatly 3P0 is ready and waiting.

$20 works great holds 17 psi just fine for as long as there is water in it.Also holds 9-10 quart jars.

i would have a hard time trusting wood to hold together a pressurized pot of boiling water and burning hot steam. But that's just me.

the rocker never started jiggling, which was the whole point of the sand bath. but it was on high for about an hour, and i didnt see any signs of heat, except the burning smell. so i took the bath off the stove and the bottom of the pan was crackling a good bit, i guess from the taking it off the heat right away. then i tried to set it on a metal cookie sheet to cool off, but that thing started getting soft and melting a bit. i dunno if the jars got sterilized, but i do know if it softened metal, it must've been fucking hot, so im gonna inoculate em i guess.

the jars are compeletly burnt. the substrate is literally toasted, there is no water left whatsoever, although i did take the control piece off to vent the steam. i have reason to believe that the water level was probably very low while cooking in the sandbath. the question is, did the substrate get burnt so badly because all the water evaporated, or is it because i didnt have a rack? i put a couple layers of aluminum foil, folded up, into the bottom of the cooker, at someone's suggestion. any thoughts?

It could be either or both. Always have an inch of watter in the bottom and if you dont have a rack use a towel not tin foil.

sounds like both to me.
aluminum foil conducts heat. why do you think most PC's are made out of aluminum? don't it seem silly to use a piece of aluminum to keep your jars off the aluminum bottom of the PC? although i could see it *maybe* working with a whole bunch of it crumpled up, use a rag next time.
water boiling out to nothing will definitely ruin your jars. and maybe your PC.
PC rule of thumb: put your PC through test runs so that you know it functions, and you know how to operate it correctly, before putting anything in it.
in fact that goes for FCs, incubators, whatever. test yer shit out before subjectng your grow to it folks

i think the best bet is just to invest some money in a proper pc. itll be easier and at least ill be able to get up to 15 psi. im not trying to drop 150 on the american standard or whatever they are. anyone have suggestions on a good one for around or under a 100 bucks?

that works just fine. just crumple and fold the foil a bit, just to put space between the bottom and the jars. Aluminum conducts heat, but more importantly, it adjusts quickly to its surrounding temp. the foil is going to be the same temperature as the water around it. i still do this in one of my PC. the PC smells different when i use a rag, and i dont prefer it.

i used to use crumpled foil on the bottom of my PC... but i then just bought a piece of small chickenwire, bent it to stand up in the bottom of my pc, and it worked for a while, but eventually just bent into a concave cage.
So I then bought a few steaming racks for my PC... they work great.
