Bacon and Chants! I always liked the Chicken Chant. And fish pans. Fish, fresh fish and fresh mushrooms, one might go to heaven on shrooms.

I stumbled on a couple patches of chants last week and it was pretty much the same situation. Many were insect infested!
So I have a question...
1.) Do insects in and on a mushroom mean it is past edibility? 2.) If insects are a typical occurance, even in prime edibles, what techniques do you use to debug them before eating?
Some of the chants I found were really nice, and I wanted so bad just to take them home and cook them up. Unfortunately, I wasn't aware that they were edible chants at the time.

Blackswamprat: I found about a pound and a half of Lobsters Friday, in New Hampshire. Some were still pretty young and white, but others were perfect. I will try to take some pics tonight and post.
Yellow Foot Chants have started fruiting as well.

If you wanna eat a mushroom that has small little grubs crawling through it more power to you. Its not going to kill you. Its just gonna gross out a couple people. But what they dont know wont hurt them......

Sometimes even the expensive imported Italian Porcini that you find dried in supermarkets show some signs of bugs once inhabiting them.
If there's a few bugs and your drying the mushrooms they tend to crawl out as the mushroom dries. If your going to eat them fresh a soak in salt water does the trick.
I've been told that when you harvest shrooms you should put them cap down and the stem pointing upwards in your basket. Apparently this confuses the little buggers and they'll turn tail and climb back up the stipe. I don't know how much truth there is in this
