Hey guys just wanting to know if these are ok for fruiting now - no sign of pinning yet, been in incubator for 3 weeks tommrow.
What do ya think?

Well, if the substrate has been completely covered by the white mycelium then it's 100% colonized.
Some people wait 1-3 days after 100% to make sure that the center is fully colonized, but it's not required.

I think you could wait another 2-3 days. then do a dunk to rehydrate the cakes, more water = more shrooms

Yes yes I do plan on dunking 
Just need to know whether to refridgerate the cakes or not while dunking. I've heard stories going both ways.

I cant speak from experience (I don't do cakes but I cold shock my casings sometimes) but I would assume dunking in the fridge would serve as a cold shock to induce pins & also rehydrate the cake. Just use water that has been boiled for 10-15 min(nice & clean) Let it cool then do the dunk I use tap water that has been boiled to mist my casings

That tek is crap. It's the worst advice I've heard here. Use the REAL PF tek.

The tek I Linked to was one recommended in your link, available in 12 languages. I agree that the fanaticus.com/pftek is the original and the best but a little overcomplicated for noobs.

You don't want in vitro pinning. It will ruin your first flush. It's that kind of bad advice that makes it a bad tek.
The original PF tek is plenty simple. It wouldn't be so bad if people just tried to simplify and add pics to the PF tek, but they often end up changing it and adding bad advice like waiting for in vitro pinning that can completely ruin someone's first attempt. That's why they should be avoided.
