the asian dimsum "secret sauce" people pay extra for at chinese restaurants is simply
3 parts soy sauce 2 parts unpureed sriracha 1 part sesame oil

Beleive it or not, some of the best soy made in this country can be found right here in VA (Richmond to be exact). Ajinomoto's sister brand San-J makes a line of really nice and balanced soys (better quality than kikkoman) Personally I really only use Tamari, which contains only soy beans, it's lighter and more delicate in taste and generally isn't as salty. They also make their whole line in Organic too. Although I must admit, really good japanese soy sauce is the best and with some of them you really can taste the difference, almost like wine. I also use indonesian kecap manis in both regular and extra sweet, they're very syrupy sweet soys that make great marinades, especially for grilled foods(the secret to a good satay), mushroom soy which is quite salty but has a nice flavor and loads of umami, and XO sauce (expensive but its unique flavor and composition are things I've come to love about it) I've also been experimenting with dried soy sauce and dried sesame oil powder which you can request free samples of on Ajinomoto's US website. The dried soy is definitley what's in a majority of instant gravy packets, soups and such, I've used it to dust fish fillets with great results, the powdered sesame oil makes a great emulsifier for dressings and sauces and adds a great texture since it contains malodextrine.

 I havnt been able to find this stuff again but it was a great soy and not that salty..
I havnt found a favorite yet but I like to pick a new kind every time Im at the Asian market. On most I dont have a clue what it says but so long as soy beans are in the ingreedients Ill get it.
Soy sauce is like wine. Some are just crap and others are delicate and give you an understanding of how good soy can compliment a dish.
