Pasteurization

As I was pasteurizing my horse poo, I realized that the temperature of the poo in the middle of my oven bag where I'm measuring the temperature isn't going to be the same temperature as the poo that is at the edge of the bag which is separated by lightly boiling water by only the oven bag. Boiling temperature of water is above pasteurization temps and would technically start sterilizing my poo. So then at the end of the process, wouldn't half my poo be sterilized and half be pasteurized? Any thoughts?

I'm have the same exact dilemma. I think I'm going to find a low temp solution and allow it to "cook" for 3-4 hours, allowing plenty of time for the center to get to the right temp. I might pick up a electric slow cooker used for turkeys. Or maybe a really huge pot with plenty of space for the bag of poo to float separate of the edges of the pot. Either way, I'm going to avoid boiling water.

Bring water pot/container temperature up to 160/170F range. Adjust, so the temperature remains constant +/- 5 degree's.
Immerse bag, held down with a weight, if need be.
Let it steep, overnight.
Major companies use steam heated rooms.
They use forklifts to stack large trays, one over the other, almost to the ceiling.
They leave the trays in it several days.

Turkey size kitchen counter type roasting oven will resolve the problem.

Similar models can often be found in thrift stores for under $10.
Just make sure the low setting is below 150F
