I just got my pressure cooker today in the mail. Before buying i made sure it had a 'pressure indicator'. However this indicator turned out to be the weight on the lid starts turning and giving out steam. In the instruction manual it says the PC works at around 11.6 psi at optimal pressure. Would this pressure do? Should i just add a bit more time on?

For converting times from 15 psi to 10 psi add 50%. For 15 to 12 conversion you should add around 25%.

Iv read that some ppl even go for 1 to 1.5 hours at 15psi as a precaution. I might just do the same for grain jars as long as it doesnt ruin my grain in any way.

Yep, 60-90 minutes is about right for grains in quart jars.

I use 90 minutes at fifteen pounds for grains. I'd suggest two hours if you're running at less pressure.
The way to use your pc is to turn the stove on high and allow it to begin venting steam once it warms up. Keep the weight off for the first five minutes steam is escaping in order to get the interior and jars up to temperature. Then, put the weight on and allow it to come to pressure. Once pressure is reached, turn the stove down to the minimum setting that will maintain pressure with a minimum of rattling of the weight. Most PC's will vent a small amount of steam just before the weight actually rattles. If you can find that spot, you can run for several hours without using much water. When the weight rattles constantly, you'll lose your water in a short time.
Be sure to put something on the bottom to protect your jars from the heat of the stove burner. RR

Na, just use the tray on the bottom. The cloth is for people who bought a PC without a tray. RR
