HELP! Unexpected pins on uncased straw

AF was away this weekend and just came back to his colonizing straw to find about 6 1/2" - 1" shrooms in one container and a bunch of pins around the edge of another. The third one he has smells bad and it gave him a headache after smelling it so it's going in the trash. All of the straw is colonizing in 45 gal rubbermaids and the mycelium hasn't thoroughly colonized the straw yet - at least he doesn't think so. The mycelium is everywhere but isn't thick, he can still see most of the straw with mycelium lightly covering it. What should he do? Should he wait until the flush is over and then case it after? The other problem is without a casing layer, there is no source for humidity in the rubbermaids. Any suggestions on that? Should he lightly mist the walls and top or uncolonized areas to get humidity up? Also what temp should he keep them at now? Thanks for any advice.

Also, what would have caused this pre-mature fruiting?
