It takes at least 15 min @ 15 psi to sterilize anything other than just surface sterilizing instruments. 10 min is not enough.

I do just fine... after all, it's boiling the entire time you're getting it up to pressure. And you don't even need to use a pressure cooker, 15 minutes in a pot of boiling water would be fine, but i don't think this is a discussion thread, i think it's just wronguys trying to gather teks to make a new entry in the faq

Good then I'll mention that all liquid and agar medias get sterilized for 15 min @ 15 psi as per FDA mandate.

You may do fine, but your just pasteurizing or semi-sterilizing unless you hit 120C for 15 min. Not trying to argue you your success, it's just a microbiological definition issue.

I want to try and keep this thread about recipes, not an open discussion for the application. If we can limit the replies to actual proven recipes that would be great folks.

As I said, keep 'em coming. I'll let this run through the weekend and start adding.

Good idea about making this a permanent addition,LC is the only thing I'm good at making in this hobby (So far,but that is changing rapidly).I started off with the tek on here with the salsa jar at the top of the post.I think the tek belongs to Otto.It works really good.But now that I got a PC I'm going to move on to the baby bottle tek.Make sure you include those.And while I'm here does anyone have ant feedback on that apple juice tek mentioned up there.I may just try it and find out myself :cool:

i like Karo because of the clarity and the fact that it works. I have a 1.5 pint jar going right now with little white clouds floating around growin bigger everyday thanks to the Karo LC teks..

One more LC tip I have for you... When making your jar don't put the hole in the center, put it near the edge. That way you'll actually be able to suck up the myc with a normal needle when you tilt the jar to that side.

I've seen way too many LCs with holes in the center.

Just make sure you include PD, ME, karo, and honey and that will cover it. The PD is effluent (boiled 30 min) from 200g of potatoes/L, ME is 30g/L for 3% and 40g/L for 4%, karo and honey are 5ml/100ml for 4%.

That should cover it. There are all kinds of recipes in my media guide, but I haven't heard of anyone using them much. Adding yeast works well, but it makes the LC cloudy so it's only a good choice for agar.

OMNI Styles.

RECIPE: Makes 2 Qt Mason Jars (600ml full)
1.2 Liter - Clean Water
1 Tablespoon - Dextrose
1 Tablespoon - Extra Light Malt Extract

Ive had problems with LME clumping up and never fully dissolving, if that happens, mix the ingredients in your clean blender, i use a hand blender.


fill jars 600ml full of LC.
add a piece of Broken Glass, or marbles, broken glass is cooler though. (to break up Mycelium)
You need to have a lid with both a filter port and an injection port.

A small hole drilled in the lid with a bead of silicone over it = Injection port
A 1/4 in hole with a layer of paper tape over it = filter port
Now put a piece of tyvek over the lid and then put the band on.
like these:


theres a million way to make lids...


put foil over the top of each jar.
PC for 20 min @ 15psi.

once they cool, squirt a small amount of spore solution into it.
Incubate at 85 degrees
stir a few times a day and you'll have a super thick LC in 4-5 days.

then...

Ok I keep seeing this caramelization stuff about overcooking your LC and causing your sugars to carmilize in an LC. I was thinking about this and I know from making candy that caramelization happens when sugars reach a certain temperature not the amount of time that they spend at a certain temperature. Since water can get no hotter than 215 at 15 psi I would think you couldn’t over carmilize the sugars not allowing for hot spots on the bottom of the PC of course. However if most people in the know say 15-20 min in the PC I'm just going to go along with that because its more time efficient but I don’t really worry too much about over cooking a few minutes. counter points are welcome

I have tried both recipes and my product always comes out way darker then it should. Why. It's in the pressure for 20 then I tried 15 mins at 15 psi. I have even done it and released steam to reduce exposure to heat. My next step is corn sugar and malted extract.
