I would really like to take some classes of discipline along the line of martial arts.
any specific practices one would recommend for starting? I've been looking into aikido, but I'm wondering if there is anything that might make for a better transition, since whatever I enter, it will be new to me.
any advice on going about such a process is welcome

It really depends what you're looking for man. If you're looking for some discipline, or just be able to defend yourself, or both. There's plenty choose from, but it depends on your goals and motives which one is right for you.

I've taken judo/jujitsu clases in the past. They are both awesome for discipline and self-defense.

IMO grappling martial arts are the way to go. In a real fight, no one is going to let you square off, take a deep breath and punch them. Almost every "Street fight" I've seen ends up in a type of wrestling match.
So for praqctical self defense, I'd go brazilian jiu jitsu all the way.

If you do want to take aikido at some point, entering with a clean slate might be best. If you've trained in harder styles before taking up a softer discipline (aikido or bagua for instance,) you may find that you have to work against your previous conditioning.

if you want discipline, meditation, and spirituality tai chi is a good one.

a good school will be a mix of styles
also, if you really want to learn, you should try finding a school that is really hard, like you get your ass kicked and shit. nothing like paying someone to beat your ass so you can get stronger 
damn, now you're making me want to get back involved in martial arts
I was in that shit for ten years, almost got to black belt, but dropped out when I started living like a freaky beatnick 
and let me tell you, that training has come in handy a few times while I've been living dangerously.

muay thai is good, great workout and gives you some killer pinches and kicks. But if you want to get into it to kick peoples asses mma is the way to go.

I agree MMA is the way to go.
I only did BJJ and a bit of Judo because I don't like to be hit.
My advice is that whatever style you choose make sure you get to sparr seriously with other people.
So if you choose Karate, Boxing, Kick Boxing, Muay Thai... make sure that part of your training includes going into the ring and trading some serious hits.
The same goes for BJJ,Judo,Sambo, or even Wrestling. Try to spar as hard and as seriously as possible.
Don't go into places that all they do is punch the air and practice kata.
